Ingredients
- Organic Chickpeas: Roasted to crispy perfection, these chickpeas add a satisfying crunch while packing in fiber and plant-based protein.
- Organic Butternut Squash: Use either a whole butternut squash or organic honeynut squash (my favorite) for a naturally sweet, nutrient-rich addition loaded with vitamins A and C.
- Organic Brussels Sprouts: These bring a delicious earthiness to the dish and are loaded with fiber, vitamins, and minerals to support overall health.
- Organic Baby Bella Mushrooms: Halved into large pieces to add extra heartiness and a boost of nutrition to the sheet pan.
- Organic Cauliflower Florets: Fresh or frozen cauliflower florets work perfectly here, adding volume and a boost of antioxidants.
- Organic Red Onion: Adds a beautiful pop of color to brighten up the whole meal.
- Organic Seasonings: A simple blend of Italian seasoning, garlic powder, sea salt, and black pepper.
- Organic Avocado Oil: My go-to oil for baking, avocado oil is rich in heart-healthy monounsaturated fats and can handle high heat without breaking down.
- Organic Balsamic Tahini Dressing: Creamy, savory, and lightly sweet, this homemade tahini drizzle perfectly complements the roasted veggies and chickpeas—don’t skip it!
How to Make
- Sheet Pan. Preheat your oven to 425°F (220°C). On a lined baking sheet, spread out the chickpeas and winter vegetables. Drizzle with avocado oil and sprinkle with the seasonings. Toss everything well to coat evenly. Roast in the oven for 25–30 minutes, tossing halfway through to ensure even cooking and a perfect crispy finish.
- Balsamic Tahini Dressing. While the veggies roast, whisk together all the dressing ingredients in a bowl. Slowly add water, a little at a time, until you get a smooth, semi-thick, pourable consistency.
- Assemble. Divide the roasted chickpeas and vegetables between bowls, then drizzle generously with the creamy balsamic tahini dressing. Enjoy!
Pro Tips for a Perfect Vegan Sheet Pan Meal Every Time

- Use Your Favorite Organic Veggies: Feel free to customize with whatever seasonal or fresh veggies you have on hand—this recipe is super flexible!
- Add Some Greens: Want to switch things up? Turn this sheet pan meal into a warm salad by serving the roasted veggies and chickpeas over a bed of fresh organic greens.
- Don’t Skip the Tahini: If you haven’t tried tahini yet, you’re missing out—it adds amazing creaminess and flavor. But if you don’t have tahini on hand, organic raw cashew butter makes a great substitute!
