How to Make
- Buffalo Sauce. In a bowl, whisk the sauce ingredients together.
- Cauliflower. Preheat the oven to 400 degrees F & line a sheet pan with parchment paper. Add the cauliflower florets & toss with the buffalo sauce. Transfer to the oven & roast for 15–20 minutes, flipping halfway.
- Avocado Crema. Using a high-speed blender, food processor, or an immersion blender, add the crema ingredients & blend until smooth. If needed, add more spring water to achieve a thick yet creamy consistency.
- Slaw. In a mixing bowl, combine the slaw with ⅓ of the crema until it’s well coated.
- Assemble. Divide the buffalo cauliflower, warm black beans, slaw, & avocado crema between bowls. Garnish with fresh cilantro & enjoy!
