The inspiration for this recipe comes from the traditional steak fajitas, but with a plant-based, soy-free, & healthy twist. While portobello steaks don’t taste exactly like a steak, they embody a “meaty” texture & they’re super tasty in their own right.
Alongside the fajitas, the pairings of cilantro-lime cauliflower rice, black beans, & creamy avocado result in a yummy fiesta dinner!

- Organic Bell Peppers & Onions: For the fajitas, of course! You can use any color combination that you have on hand!
- Organic Black Beans: The beans are the staple for this fajita bowl. They’re also full of healthy fats & plant-based protein.
- Organic Cauliflower Rice: Cauliflower rice isn’t technically rice, but it looks like it while being packed with nutrition. You can find organic pre-made cauliflower rice at your local health food store.
- Organic Avocado: Slice it, dice it, or mash it up into guacamole for some healthy fats.
- Organic Lime: A healthy squeeze of lime elevates the cauliflower rice.
- Organic Fresh Cilantro: For the cauliflower rice & for topping.

- Cilantro-Lime Cauliflower Rice. In a skillet, defrost the cauliflower rice. Once defrosted, stir in the remaining ingredients.
- Assemble. Divide the cilantro-lime rice, warm black beans, & fajitas between bowls. Top with avocado & fresh cilantro. Enjoy!
