Ingredients
- Organic Black Beans: The beans are the staple for this bowl & they’re full of healthy fats + plant-based protein. I used organic black beans, but you can certainly use organic pinto beans.
- Organic Sweet Potato: I personally leave the skin on, because it adds extra fiber. Just be sure to scrub well before chopping.
- Organic Cauliflower Rice: We’ll be using cauliflower rice instead of regular rice. Cauliflower rice isn’t technically rice, but it looks like rice. You can find organic pre-made frozen cauliflower rice at your local health foods store.
- Organic Greens: Any greens work great. Baby spinach, arugula, chard, &/or massaged kale.
- Organic Avocado: For some extra healthy fats + creaminess.
- Organic Avocado Oil: Avocado oil is my go-to baking oil, because it’s neutral in flavor & it can be used at high-heat temperatures.

How To Make
- Sweet Potatoes. Preheat oven to 425 degrees F. Add the sweet potatoes to a sheet pan lined with parchment paper. Toss with the avocado oil & seasonings. Bake for 20 – 25 minutes, flipping halfway.
- Assemble. To serve, divide the greens of choice, cooked cauliflower rice, roasted sweet potatoes, & black beans, between bowls. Garnish with sliced avocado. Enjoy!

Storing & Reheating Vegan Nourish Bowl

- 1 large sweet potato, chopped
- 2 tsp avocado oil
- Sea salt & black pepper, to taste
SERVE
- Fresh greens of choice
- 2 cups cooked cauliflower rice
- 2 (15-oz) can black beans, warmed
- Avocado(s), sliced
Instructions
- Sweet Potato. Preheat oven to 425 degrees F. Add the sweet potatoes to a sheet pan lined with parchment paper. Toss with the avocado oil & seasonings. Bake for 20 – 25 minutes, flipping halfway.
- Assemble. To serve, divide the greens of choice, cooked cauliflower rice, roasted sweet potatoes, & black beans, between bowls. Garnish with sliced avocado. Enjoy!
