Ingredients
- Organic Beans: Full of healthy fats & plant-based protein. You can certainly use organic pinto beans.
- Organic Cauliflower Florets: Fresh or frozen will do.
- Organic Red Enchilada Sauce: Duh?! I used red, but you can totally use green. My current favorite brand is Siete Foods.
- Organic Fajitas: For some extra nutrition, we’ll be roasting up a yellow onion, yellow bell pepper, & green bell pepper. Feel free to use whatever colors you prefer.
- Organic Jalapeño Crema: It’s spicy & creamy, which truly elevates the bowl. Feel free to omit the jalapeño if you can’t handle the heat.

How to Make
- Cauliflower & Fajitas. Preheat the oven to 425 degrees F & line a sheet pan with parchment paper. On one side, add the cauliflower florets & toss with the enchilada sauce. On the other side, toss the fajitas with the oil & seasonings. Transfer to the oven & roast for 20–25 minutes, flipping halfway.
- Jalapeño Crema. To a food processor, high-speed blender, or using an immersion blender, add all of the crema ingredients. Blend until smooth. If needed, add more spring water to achieve a thick yet creamy consistency.
- Assemble. Divide the enchilada cauliflower, fajitas, & warm black beans between bowls. Serve with the crema & fresh cilantro. Enjoy!

Tips for Making this Vegan Enchilada Bowl Perfectly
- Organic Red Enchilada Sauce: I used red, but you can certainly use green. My current favorite brand is Siete Foods.
- Organic Black Beans: Organic pinto beans will also work.
- Organic Avocado: Be sure to use a large, ripe avocado to ensure that the crema is super creamy.
- Organic Jalapeño: If you can’t handle the heat, omit the jalapeño.

Storing & Reheating

Storing. Transfer the bowl ingredients & crema to separate airtight glass containers. The crema will last up to 2 days, & the bowl will last up to 4 days.
Reheating. To reheat, preheat the oven to 350 degrees F. Transfer the bowl ingredients to an oven-safe bowl. Place in the oven for about 10–15 minutes, until warmed through. To serve, pair with the remaining bowl ingredients.

- ½ cup red enchilada sauce
FAJITAS
- 1 yellow bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced

- Sea salt & black pepper, to taste
JALAPEÑO CREMA
- 1 ripe avocado
- 2 tbsp fresh lime juice
- 1 cup fresh cilantro
- 1 jalapeño, de-seeded if needed
- 2 garlic cloves
- Sea salt & black pepper, to taste

- ¼ cup spring water, plus more to thin
BOWL
- 1 (15-oz) can black beans, warmed
