Ingredients
- Organic Sweet Potato: I personally leave the skin on, because it adds extra fiber. Just be sure to scrub them well before chopping.
- Organic Green Bell Pepper: You can use any color that you have on hand.
- Organic Red Onion: For a pop of color.
- Organic Quinoa: To provide this Mexican bowl with a nutty flavor, along with protein & fiber. You can use any color that you prefer – white, red, or multi-color.
- Organic Avocado: Slice it, dice it, or mash it up into guacamole.
- Organic Cashew Queso: Homemade & vegan cashew queso is essential for this fajita bowl. Feel free to warm it in the oven too!
- Organic Cilantro: Fresh cilantro adds brightness & that authentic Mexican flavor that you can’t beat!
- Organic Avocado Oil: Avocado oil is my go-to baking oil, because it’s neutral in flavor & it can be used to cook at high-heat temperatures.

How To Make
- Quinoa. Prepare quinoa as instructed on the package.
- Sheet Pan. On a large baking sheet, lined with parchment paper, toss the sheet pan ingredients with the oil & seasonings. Bake for 20 – 25 minutes, tossing halfway.
- Cashew Queso. In a high-speed blender, add the queso ingredients. Blend until smooth & creamy. If it’s too thick, add some spring water, a tablespoon at a time, to achieve desired consistency.
- Assemble. Divide the roasted veggies & quinoa between bowls. Serve with the avocado, cashew queso, & garnish with fresh cilantro. Enjoy!

Tips for Making this Vegan Fajita Bowl Recipe Perfectly
- Organic Quinoa: You can use any color that you have on hand – white, red, or multi-color.
- Organic Bell Peppers: Feel free to use whatever color of bell peppers you prefer.
- Soak Cashews: Be sure to soak your organic raw cashews in hot water for about 10 minutes to soften. This ensures that the cashew queso is creamy + smooth.
- Cashew Queso: Instead of adding the tomato paste & spices to the queso, swap with 2 tablespoons of your favorite salsa. Simply blend the cashews, spring water, & nutritional yeast, until smooth, then stir in the salsa.
