I honestly don’t think there’s anything better than a one pot recipe and when it includes pasta, it’s a no brain winner!
As the name suggests, this healthy vegan pasta recipe only requires one pot, which means your cooking & cleaning time are cut in half. However, just because the amount of time has decreased, doesn’t mean that the flavor does.
This recipe includes a handful of veggies, protein-rich pasta, and a creamy tomato sauce. The combination is simple, but delicious, and a bonus is that it’s completely customizable!

- Organic Garlic: Make sure to use fresh garlic and not garlic powder. This ingredient is crucial to build flavor.
- Organic Tomatoes: Diced, crushed, or tomato sauce all work for the pasta sauce.
- Organic Raw Cashews: Cashews provide the most creamy consistency to the tomato sauce.
- Organic Seasonings: Italian seasoning, red pepper flakes, sea salt & black pepper!
- Organic Rotini Pasta: It wouldn’t be a pasta recipe without it! I love using pasta noodles that are made with one ingredient – lentil flour. They taste just like the real deal and it’s high in protein.
How To Make
- Sauté. In a large pot or dutch oven, heat over medium heat, sauté the onion, mushrooms, carrots, and zucchini, for 5 minutes. Add the minced garlic and seasonings. Cook for 2 minutes.
- Cashew Cream Tomato Sauce. Incorporate all the sauce ingredients to a high speed blender and blend until smooth.
- Boil & Simmer. Stir in the uncooked pasta, sauce, and broth. Bring to a boil, then reduce heat simmer at a gentle rolling boil for 10 minutes, or until pasta is tender.
- Serve. Divide between bowls. Enjoy!

- Organic Tomatoes: Diced, crushed, or tomato sauce all work for the pasta sauce.
- Soak Cashews: Be sure to soak your organic raw cashews in hot water for about 10 minutes to soften.
- Organic Vegetables: Don’t have the veggies listed on hand? No worries, include what you’ve got. Spinach, broccoli, sliced tomatoes, etc.
Storing & Reheating
As mentioned above, this creamy Vegan One Pot Pasta recipe is perfect for leftovers & meal prep! Just be sure to let the pasta cool completely before transferring to an air-tight glass container.
Fridge Storage. Transfer to an air-tight glass container in the refrigerator for up to 4 days.
Reheating. To reheat, simply transfer the pasta to a saucepan on the stovetop over medium heat, adding a little extra filtered water as needed until warm.

- 2 cups button mushrooms, sliced
- 1 small zucchini, sliced into half moons
- 2 carrots, chopped
- 3 garlic cloves, minced

- ½ tsp red pepper flakes
- 8 oz. lentil rotini pasta
CASHEW CREAM TOMATO SAUCE
- 1 (14.5-oz) can diced tomatoes
- ½ cup raw cashews, soaked in hot water for 10 minutes
- ½ cup filtered water
