- Organic Yellow Onion: Yellow onions bring a mild sweetness, but feel free to use whichever onion you have on hand.
- Organic Bell Peppers: I selected a mix of yellow & red peppers, but any bell pepper will brighten up the dish beautifully.

- Sheet Pan. Preheat the oven to 425 degrees F. On a baking sheet, combine the drained chickpeas & chopped vegetables. Toss everything with avocado oil & seasonings until evenly coated. Roast in the oven for 20–25 minutes, flipping halfway through to ensure even cooking.
- Spicy Tahini Dressing. In a mixing bowl, whisk together the dressing ingredients. Gradually add water, a little at a time, until the dressing reaches a semi-thick, pourable consistency.
- Assemble. Divide the roasted hash between bowls. Top each serving with sliced avocado, a generous drizzle of the spicy tahini dressing, & a sprinkle of fresh cilantro. Enjoy!

- Flip Halfway: Turning everything halfway through roasting helps everything cook evenly & get perfectly crispy.
- Organic Raw Tahini: If you don’t have it, organic raw cashew butter is a great substitute.

- Add Greens: For extra nutrition, toss in some kale or spinach during the last 5 minutes of roasting.
