- Roast the Sweet Potatoes. Preheat the oven to 425°F (220°C). On a baking sheet, toss the thinly sliced sweet potatoes with oil & seasonings. Spread them out in an even layer & roast for 15–20 minutes, flipping halfway through, until tender.
- Pumpkin Cashew Queso. Add all the queso ingredients to a high-speed blender & blend until completely smooth. If the queso is thicker than you like, add more spring water by the tablespoon until it reaches your desired consistency.
- Casserole. In a casserole-safe dish, spread a thin layer of enchilada sauce across the bottom. Add a layer of sweet potatoes, followed by a thin layer of pumpkin cashew queso & half of the black beans. Next, spread another layer of enchilada sauce, then another layer of sweet potatoes. Add another thin layer of pumpkin cashew queso, the remaining beans, & the remaining enchilada sauce. Finally, top with the last layer of sweet potatoes & drizzle with the remaining pumpkin cashew queso.
- Bake. Place the casserole in the 425°F (220°C) oven, uncovered, & bake for 10–15 minutes until bubbly & heated through.
- Serve. Remove from oven. Top with avocado, pumpkin seeds, & fresh cilantro, if desired. Enjoy!
