Enchiladas will forever be a favorite comfort food of mine, but the majority are unhealthy and a hassle to make, not to mention the fact that they make you feel sluggish. Can you relate?!
Thus, may I present to you this Vegan Black Bean Sweet Potato Enchilada Bake: the answer to your Tex-Mex prayers. Instead of tortillas, we’re layering the casserole with roasted sweet potatoes. Yep, no tortillas in sight, but just pure naturally sweet flavor, hearty texture, and good-for-you nutrients!
Layered with protein-packed black beans, a clean enchilada sauce, and creamy cashew queso, you can actually enjoy every bite without a second thought!

How to Make
- Roast the Sweet Potatoes. Preheat the oven to 425°F (220°C) and line a sheet pan with parchment paper. Toss the thinly sliced sweet potatoes with the avocado oil and seasonings. Spread them out in an even layer and bake for 15–20 minutes, flipping halfway through.
- Cashew Queso. Add all of the cashew queso ingredients to a high-speed blender and blend until smooth (no gritty pieces left). If the queso is super thick and difficult to blend, add in some spring water (a tablespoon at a time) to achieve a creamy consistency.
- Casserole. In a casserole-safe dish spread a thin layer of enchilada sauce across the bottom, a layer of sweet potatoes, a thin layer of cashew queso, and half of the beans. Repeat again, starting with the enchilada sauce, sweet potatoes, cashew queso, all of the beans, and the enchilada sauce. Finally, add the last layer of sweet potatoes and the remaining enchilada sauce, and drizzle with the last bit of cashew queso.
- Bake. Transfer the enchilada casserole to the 425°F (220°C) oven, uncovered. Bake for 10–15 minutes, until hot and bubbly.
- Serve. Top with avocado, fresh cilantro, lime slices, or your favorite toppings. Enjoy!
Tips for the Perfect Vegan Enchilada Bake Recipe

CASHEW QUESO

- ½ cup raw cashews, soaked in hot water for 10 minutes
- 1 tsp chili powder
- ½ tsp smoked paprika
- 2 tbsp nutritional yeast
- 1 tsp garlic powder
- 1 tsp onion powder
- Sea salt & black pepper, to taste
CASSEROLE
- 1 (15-oz) can black beans, drained
- 1 cup red enchilada sauce
TOPPINGS
- Avocado(s)
- Fresh cilantro
- Lime slices
Instructions
