As the weather gets warmer I start to gravitate towards more cooler dishes. And while salads are super refreshing, I love a great vegan pasta salad recipe. Hence, why I created this Vegan Hummus Pasta Salad. While you can enjoy this recipe warm, I think it’s best served chilled, to recover from a hot summer day.
The main player of this Mediterranean-inspired dish is obviously the hummus. You can certainly use homemade hummus, but I opted to use store bought. How To Make
- Cook the Pasta. Bring a large pot of water to a boil. Add the pasta & stir to prevent sticking. Cook to al dente according to package directions. Drain the pasta & set aside.
- Hummus Sauce. In a small mixing bowl, combine the hummus, lemon juice, and filtered water.
- Combine. In a large bowl, add the chopped vegetables, cooked pasta, and the hummus sauce. Combine until everything is coated. Ideally, let sit in the refrigerator for at least 30 minutes before serving.
- Serve. Divide between bowls and garnish with fresh basil. Enjoy!

- 8 oz. lentil rotini pasta
HUMMUS SAUCE
- 1 cup hummus, original flavor
- 2 garlic cloves, minced
- 2 tbsp fresh lemon juice
- Filtered water, as needed
VEGETABLES
- 1 small red onion, chopped
- 1 yellow bell pepper, chopped
- ½ English cucumber, chopped
- 1 cup cherry tomatoes, halved
- ¼ cup kalamata olives, halved
- ¼ cup sun dried tomatoes, chopped
