Ingredients
- Organic Kale: A nutrient-rich, hearty base for this salad.
- Organic Quinoa: Adds a nutty flavor along with protein & fiber. Use white, red, or tri-color quinoa—whichever you have on hand.
- Organic Stokes Purple Sweet Potato: Brings vibrant color & extra nutrition. Leaving the skin on adds fiber—just scrub thoroughly before slicing.
- Organic Carrots: Provide a touch of sweetness, brightness, & additional nutrients.
- Organic Red Bell Pepper: Adds color, but feel free to use any bell pepper variety.
- Organic Red Onion: The most vibrant onion option, though other types work well too.
- Organic Cauliflower Florets: Fresh or frozen, both are great for texture & nutrition.
- Organic Avocado: Adds creamy texture & healthy fats. Make sure to use a ripe avocado.
- Organic Balsamic Tahini Dressing: A flavorful, creamy dressing that perfectly complements the salad—don’t skip it!
- Organic Hemp Seeds: A sprinkle of these boosts plant-based protein & omega-3s.
- Organic Avocado Oil: Ideal for baking thanks to its high heat tolerance.

How to Make
- Quinoa. Prepare quinoa according to the package instructions.
- Roasted Vegetables. Preheat the oven to 425°F (220°C). Place the chopped vegetables on a parchment-lined baking tray. Drizzle with avocado oil & seasonings. Toss to coat evenly. Roast for 20–25 minutes, flipping halfway through.
- Kale. Add the chopped kale to a large bowl. Squeeze fresh lemon juice over it. Using clean hands, massage the kale for 1–2 minutes until it softens.
- Balsamic Tahini Dressing. In a bowl, whisk together the dressing ingredients. Gradually add water until the dressing reaches a semi-thick, pourable consistency. Set aside.
- Serve. Divide the massaged kale & cooked quinoa between bowls. Top with roasted vegetables, avocado, a drizzle of balsamic tahini dressing, & a sprinkle of hemp seeds. Enjoy!

How to Make This Vegan Kale Salad Perfect Every Time
- Massage the Kale Well: Massaging kale with lemon juice softens its tough texture, making it easier to eat & digest. Don’t rush this step—1 to 2 minutes is ideal.
- Adjust Dressing Consistency: Add water slowly to the balsamic tahini dressing until it’s pourable but still creamy. Too thin & it won’t coat the salad well; too thick & it’s hard to drizzle.
- Organic Vegetables: Customize this salad with whatever fresh veggies you have on hand. Swap cauliflower florets for roasted broccoli, add beets, or use your favorite sweet potato variety. Make this recipe uniquely yours!
Storing & Reheating
As noted earlier, this Roasted Rainbow Vegetable & Quinoa Kale Salad is ideal for healthy leftovers & meal prepping!
Storing. Store the salad components separately in airtight glass containers in the refrigerator for up to 4 days. Keep the avocado whole & slice it fresh when ready to serve to prevent browning.
Reheating. When ready to enjoy, preheat the oven to 350°F (175°C). Place the quinoa & roasted vegetables in an oven-safe dish & heat for 10–15 minutes until warmed through. Remove from the oven & serve alongside the fresh kale & remaining toppings.
