- Organic Butternut Squash: High in beta-caratone & vitamin C to add some natural sweetness.

How To Make
- Quinoa. Prepare quinoa as package instructions.
- Crispy Chickpeas & Vegetables. Preheat the oven to 400 degrees F. On a sheet pan lined with parchment paper, add the drained chickpeas & vegetables. Toss with the avocado oil & seasonings. Bake for 20 – 25 minutes, flipping halfway.
- Kale. Add chopped kale to a large mixing bowl along with the lemon juice. Massage with clean hands for 1 – 2 minutes to soften the kale. Set aside.
- Golden Turmeric Tahini Dressing. In a mixing bowl, combine the dressing ingredients & whisk to combine. Add the spring water a little at a time until a semi-thick, pourable dressing is achieved. Set aside.
- Assemble. Divide the greens, quinoa, roasted veggies, and crispy chickpeas, between bowls. Drizzle with turmeric tahini dressing. Enjoy!

- 1 (15-oz) can chickpeas, drained
- 3 cups butternut squash, peeled & de-seeded & cubed
- 2 cups broccoli florets
- 2 cups beets or 1 (6.5-oz) package Love Beets Organic Classic Vinegar Beets, chopped
- 2 tsp avocado oil
- Sea salt & black pepper, to taste
KALE

GOLDEN TURMERIC TAHINI DRESSING
- ¼ cup raw tahini
- 2 tbsp fresh lemon juice
- 1 tbsp pure maple syrup
- ½ – 1 tsp turmeric powder
- 2 garlic cloves, minced
- Sea salt & black pepper, to taste
- Spring water, to thin
