Ingredients
- Organic Quinoa: To provide this salad with a nutty flavor, along with protein & fiber. You can use any color that you have on hand–white, red, or multi-color.
- Organic Kale: For the greens of this salad, we’ll be using fresh kale.
- Organic Avocado Caesar Dressing: Ripe avocado, garlic cloves, fresh lemon, nutritional yeast, Dijon mustard, sea salt, & black pepper are used to prepare the homemade vegan Caesar dressing.
- Organic Seeds: A combination of pumpkin seeds, sunflower seeds, & hemp seeds.

How to Make
- Avocado Caesar Dressing. Add all of the dressing ingredients to a food processor or high-speed blender, or use an immersion blender. Blend until smooth & creamy. If needed, add a couple of extra tablespoons of spring water to achieve a thick yet smooth consistency.
- Kale. Add chopped kale to a large mixing bowl along with the fresh lemon juice. Massage with clean hands for 1–2 minutes to soften the kale.
- Combine. To the massaged kale bowl, add in the dressing, quinoa, & half of the seeds. Give it a good toss.
- Serve. Divide the salad between serving bowls. Finish the salad off with the remaining half of the cubed avocado & seeds. Enjoy!

Tips for Making this Vegan Caesar Salad Recipe Perfectly
- Cool the Quinoa: Be sure to cool the quinoa before adding it to the kale, as this ensures that the kale doesn’t get soggy.
- Always Massage the Kale. Trust me on this one. Kale leaves can be very tough & chewy if not massaged. I recommend massaging the kale for at least 2 minutes– you’ll get a nice hand workout in.
- Organic Avocado: Be sure to use a ripe avocado for the dressing to achieve an ultra creamy consistency.
Storing
Although this Quinoa & Avocado Kale Caesar Salad recipe is best enjoyed fresh, it can definitely work as healthy vegan leftovers! However, I recommend preparing the avocado Caesar dressing & kale before enjoying, as the dressing will brown.
