This pistachio ice cream smoothie bowl seriously tastes like a pistachio milkshake (added bonus: it’s good for you). The texture is smooth, thick, and creamy because of the frozen banana, pistachios, almond milk, and Medjool dates. Besides the pistachios, almond extract is the essential ingredient to achieve the pistachio ice cream flavor. Above all though a high-speed blender is necessary for that ultra-creamy consistently. Best of all though, it’s an easy smoothie recipe that only takes 5 minutes to make!

This pistachio smoothie is creamy and perfectly sweet, so it actually tastes like you’re indulging into a bowl of pistachio ice cream. Here are the ingredients you’ll need:
- Organic Frozen Banana: A frozen banana adds more sweetness and creaminess to this smoothie bowl!
- Organic Frozen Cauliflower: I know it sounds crazy, but adding frozen cauliflower is where the thick texture comes from. Don’t worry, you can’t taste it. I recommend using store bought frozen cauliflower, or even frozen cauliflower rice, because it blends up nicely.
- Organic Medjool Dates: Fruity, sweet, make the whole mixture a little thicker and creamier. Also, be sure to make sure that your dates are pitted.
- Organic Pistachios: The essential ingredient to making this pistachio smoothie bowl. Unsalted (and hopefully pre-shelled for the sake of your fingers!) pistachios blend right in with the other ingredient for color, extra creaminess, and most importantly flavor.

- Add: To begin, add the non-dairy milk, almond extract, ground flax seeds, pistachios, spinach, frozen banana, Medjool dates, frozen cauliflower rice, in a high-speed blender.
- Blend: Starting on a low speed use a tamper to help ingredients blend. Pausing & scraping down sides of the blender as needed. If necessary, add additional non-dairy milk in 1/4 cup increments, until a thick, smooth texture is achieved.
- Serve: Then, transfer your creamy smoothie to a chilled bowl. Garnish with coconut flakes and vanilla almond granola, if desired. Enjoy!
