This Dal Nourish Bowl is a healthy vegan recipe that will be a weeknight family favorite. Massaged kale gets paired with vibrant sweet potato fries, red lentil dal, cooked cauliflower rice, & a creamy cilantro avocado sauce. It’s a flavorful & filling vegan dinner recipe that is meal prep approved!

Today we’re pairing two of my favorite things together. Red lentil dal & purple sweet potato fries. I seriously am stoked to share this recipe with you! See what I did there?! (stokes purple sweet potatoes). Lol.
If you’re new to stokes purple sweet potatoes, you’re in for a real treat. Not only do they match well with the dal & perfect for dipping into our creamy avocado cilantro sauce, but they’re packed with nutrition.
These vibrant in color potatoes, have a sweet, almost floral taste to them. Not only are they super delish, but they’re high in antioxidants due to their purple tint. Which makes this a tasty way to add a pop of color to our vegan nourish bowl recipe while enjoying all the health benefits. I highly recommend grabbing some at your local health foods store for this recipe!

Ingredients
- Organic Red Lentils: Red lentils are essential for making the dal. You cannot substitute black, green, or brown lentils here, because they will cook very differently. Be sure to rinse your lentils before adding them to the pot too.
- Organic Full-Fat Unsweetened Coconut Milk: This is essential to make the dal creamy. I don’t recommend subbing for regular non-dairy milk & be sure that your coconut milk comes from a can, not the carton. My favorite brand is Native Forest.
- Organic Low-Sodium Vegetable Broth: Along with the coconut milk, we’ll be adding in some broth to ensure that the lentils are cooked perfectly. If you don’t have broth, spring water will do just the trick!
- Organic Spices: Curry powder, ground cumin, ground turmeric, sea salt, & black pepper, are used to spice up the dal.
- Organic Sweet Potato: For this recipe I used organic stoke sweet potato, for the pop of color & boost of nutrition. However, any sweet potato works in this recipe. I personally leave the skin on, because it adds extra fiber! Just be sure to scrub them well before slicing.
- Organic Cauliflower Rice: We’ll be using cauliflower rice instead of regular rice. Cauliflower rice isn’t technically rice, but it looks like rice. You can find organic pre-made cauliflower rice at your local health foods store.
- Organic Kale: To pair with our nourish bowl. If you’re not a fan of kale, you can use spinach or arugula.
- Cilantro Avocado Dressing: A combination of ripe avocado, fresh cilantro, & tangy lime juice, all gets pureed together to pair with our vegan nourish bowl.
How To Make
- Red Lentil Dal. In a large pot, add the rinsed red lentils, coconut milk, & vegetable broth or spring water. Bring to a boil & simmer for 15 minutes, until lentils have softened. Stir in the spices & cook for another 5 minutes.
- Sweet Potato Fries. Preheat your oven to 425 degrees F. Add the sweet potato spears to a baking tray lined with parchment paper. Toss with the avocado oil & seasonings. Bake for 20 – 25 minutes, flipping halfway.
- Cauliflower Rice. Heat a skillet over medium heat. Once hot, add frozen cauliflower rice & cook until defrosted.
- Cilantro Avocado Sauce. In a food processor or high-speed blender, combine all ingredients. Blend until smooth & creamy. Adding spring water as needed.
- Kale. Add chopped kale to a large mixing bowl along with the lemon juice. Massage with clean hands for 1 – 2 minutes to soften the kale. Set aside.
- Assemble. Divide the kale, cauliflower rice, red lentil dal, & sweet potatoes fries, between bowls. Pair with the cilantro avocado sauce, extra cilantro, & a pinch of red pepper flakes. Enjoy!
Tips for Making this Dal Nourish Bowl Recipe Perfectly

Storing & Reheating
As mentioned above, this Dal Nourish Bowl is the perfect healthy vegan recipe for leftovers & meal prep!
Fridge Storage. Transfer the bowl ingredients to separate air-tight glass containers & refrigerate for up to 3 – 4 days.
Reheating. To reheat, preheat the oven to 350 degrees F. Transfer nourish bowl ingredients to an oven-safe bowl. Place in the oven for 10 – 15 minutes, until warmed through. Serve with the kale & cilantro avocado sauce.

Ingredients
RED LENTIL DAL
- 1 cup dry red lentils, rinsed
- 1 – 1 ½ cups low-sodium vegetable broth or spring water
- 1 (13.5–oz) can full-fat unsweetened coconut milk
- 1 tbsp curry powder
- 1 tsp ground cumin
- 1 tsp ground turmeric
- Sea salt & black pepper, to taste
SWEET POTATO FRIES
- 2 large sweet potatoes, cut into spears
- 2 tsp avocado oil
- Sea salt & black pepper, to taste
CAULIFLOWER RICE
- 2 cups frozen cauliflower rice
AVOCADO GODDESS DRESSING
- 1 ripe avocado
- 1 cup fresh cilantro
- 1 tbsp fresh lime juice
- 2 garlic cloves
- Sea salt & black pepper
- ¼ cup spring water, as needed
KALE
- 2 cups kale, chopped
- Fresh lime juice
TOPPINGS
- Fresh cilantro
- Red pepper flakes
Instructions
