While this holiday dessert is completely vegan, protein-packed, & totally healthy, no one would know! Trust me!
Thanks to the avocado, it provides that super thick creamy mouse-like consistency. Along with the rich cacao plant protein, a sweet medjool date, & a splash of peppermint extract, you’ll be digging in for me!

- Blend the Liquids & Powders. To a high-speed blender, add the non-dairy milk, plant protein, cacao powder, seeds, peppermint extract, and sea salt. Blend these ingredients until smooth.
- Blend the Medjool Date. Add the soft medjool date to the blender and blend until smooth.
- Blend the Frozen Ingredients. Next, add in the frozen avocado and optional ice cubes. Blend until smooth and creamy. If needed, you can pause the blender, remove the lid, and scrape down the sides so that everything is fully incorporated. You may need to add a little more liquid depending on how thick/thin you like your pudding.
- Serve. Pour into a chilled glass, along with a dollop of homemade coconut whipped cream. Enjoy!

And when possible, always use a larger high-speed blender instead, as it will blend the ingredients much better.
- How To Make: Add your liquid first & blend your powders first, then the medjool date, before adding your frozen ingredients. By blending the liquid & powders first, it ensures that your powders blend completely.
- Blending Tip: Start your blender on low to medium speed. If you blend the pudding to quickly from the beginning, it’s really hard for the blender to properly blend the frozen ingredients – so start lower and then gradually increase the speed.

It depends, but I wouldn’t post something that was unhealthy. This chocolate pudding is full of protein, healthy fats, & superfoods. However, some puddings on the market or on the web can be loaded with tons of fruit, added sugar, & nonsense, making them a less healthy option.
What is the best protein powder to use?
For this particular Chocolate Peppermint Avocado Protein Pudding recipe, I love using Mikuna’s Cacao Chocho Superfood Protein Powder. It’s made with 5 simple ingredients & is full of vitamins, minerals, amino acids, as well fiber. Most importantly though, there is no preservatives, no artificial colors, & no artificial sweeteners. If you don’t have Mikuna’s Protein on hand, you can use your favorite cacao protein powder. However, when selecting a plant protein, it’s crucial to look at the protein content and above all, the ingredients.

- 1 scoop cacao plant protein
- 1 tbsp cacao powder
- 1 tbsp chia seeds
- ¼ – ½ tsp peppermint extract, plus more to taste

- 1 pitted medjool date
- ½ avocado
