As the temperature gets cooler, it’s time for another cozy recipe. While I could be sharing with you another comfy soup creation, I thought it would be a tasty switch to do a wholesome veggie bowl. Hence, this Delicata Squash & Quinoa Nourish Bowl.
To put simply, it’s a healthy creation that is filled with hearty ingredients that warm your soul. While the base of the bowl is delicious on its own, my honey dijon vinaigrette is a must. It’s a combination that combines pantry staples and elevates the dish. Don’t skip or skimp!

Ingredients
- Organic White Quinoa: To provide these bowls with nutty flavor, along with protein and fiber. You can use any color that you have on hand – white, red, or multi-color quinoa all work.
- Organic Delicata Squash: Technically you can use your preferred squash, but delicata adds a nice sweetness. Also, with delicata, there is no need to peel. Just de-seed and slice!
- Organic Brussel Sprouts: If you don’t have those on hand, swap for fresh or frozen broccoli!
- Organic Sauerkraut: Red Beet & Cabbage if we’re being specific. It adds the perfect earthy, yet sweet flavor that takes this nourish bowl recipe to the next level. My favorite brand is Wildbrine!
- Organic Avocado Mash: Be sure to use a ripe avocado, to transpire the creamiest result.
- Organic Greens: Any greens work great. I used Earthbound Farm’s Organic Power Greens which is a combination of baby spinach, baby red and green chards, and baby kale.
- Organic Honey Dijon Vinaigrette: A must for any nourish bowl is a delicious dressing. My honey dijon vinaigrette is the perfect mix of sweet and tangy.
How To Make
- Quinoa. Prepare quinoa as package instructions.
- Roasted Vegetables. Preheat the oven to 400 degrees F. On a sheet pan lined with parchment paper, add the sliced squash and brussel sprouts. Toss with the avocado oil & seasonings. Bake for 20 – 25 minutes, flipping halfway.
- Avocado Mash. Begin by mashing the avocado. Then mix in the remaining ingredients.
- Honey Dijon Vinaigrette. In a bowl, combine all ingredients to a bowl and whisk until fully combined.
- Assemble. Divide the greens, quinoa, roasted veggies, and sauerkraut between bowls. Top with a dollop of the avocado mash and drizzle with the vinaigrette. Enjoy!

Reheating. To reheat, preheat the oven to 350 degrees F. Transfer the vegetables and cooked quinoa to an oven-safe bowl. Place in the oven for 10 – 15 minutes, until warmed through. To serve, pair with the fresh greens, remaining toppings, & the dressing.
