I honestly can’t think of one person who doesn’t like pizza. Nope, can’t think of anyone! Therefore, this Vegan Mediterranean Roasted Red Pepper Pizza will please all who partake in a slice.
It’s a healthy vegan pizza recipe that is loaded with veggies, paced with protein, and full of spicy flavor. Not to worry though, because each bite is a yummy mash-up of healthy deliciousness.
While this is probably one of the most delicious pizza creations that I have made so far, I can’t take full credit for this masterpiece. I originally saw it on the legendary, Half Baked Harvest blog, & just knew that I had to do a vegan take on it. Each of the recipes embody a Mediterranean vibe thanks to the veggies and herbs, but include few untraditional takes.
That being said, if it’s pizza night at your house, it’s time to get going to make this baked goodness!

- Organic Red Bell Peppers: Duh?! Thinly sliced & baked at the same time as the crust. If you don’t have red, use what you’ve got or even a combination!
- Organic Vegetables: The veggies included are on this pizza are kalamata olives, sun-dried tomatoes, and marinated artichokes.
- Organic Vegan Mozzarella: Sliced thinly and topped post baking. For this pizza recipe, I used Miyoko’s Creamery Organic Cashew Milk Mozzarella. It’s made with real ingredients and there is nothing funky in it.
- Organic Spices: The spices include are red pepper flakes, sea salt, and black pepper.
How To Make
- Pizza Crust. Preheat the oven to 425 degrees F. Cover a baking sheet with baking paper. Add chickpea flour, tapioca starch, and sea salt, to taste to a mixing bowl and whisk to combine. Add ¾ cup water, ¼ a cup at a time, whisking really thoroughly after each addition so as to avoid lumps. When all water is added, set mixture aside for 5 minutes to thicken slightly (it will still be runny). Pour the dough onto the baking sheet and spread with a spoon to an oval shaped base (5 mm). Bake the crust for about 10 – 15 minutes until the pizza crust is firm but not yet golden brown.
- Bell Peppers. Slice the peppers thinly and add to a lined baking sheet. Bake at the same time as the crust for 15 minutes, flipping halfway through.
- Spicy Olive Oil Sauce. Add all ingredients to a small mixing bowl & whisk until combined.
- Assemble. When the crust & peppers are done, spread the spicy sauce on the pizza crust. Top with pizza toppings and bell peppers. Bake for an additional 10 – 15 minutes.
- Serve. Once the pizza is done baking, garnish with fresh basil and additional red pepper flakes. Enjoy!
Tips for Making this Vegan Pizza Perfectly
- Avoid Lumpy Batter: When preparing the pizza crust, first whisk together the dry ingredients, then SLOWLY mix in the water, ¼ cup at a time.
- Organic Vegan Mozzarella: For this pizza recipe, I used Miyoko’s Creamery Organic Cashew Milk Mozzarella. It’s made with real ingredients and there is nothing funky in it. The main difference though is that it doesn’t melt.
- Organic Vegetables: If you’re not a fan of artichokes substitute for mushrooms or if you don’t have red bell peppers on hand, use whatever color you’ve got. This healthy vegan pizza is truly customizable to your liking.
Storing & Reheating Vegan Pizza
Although it’s best to enjoy fresh, this Mediterranean pizza recipe will work for leftovers & meal prep! Just be sure to let the pizza cool completely before transferring to an air-tight glass container.
Fridge Storage. Transfer pizza slices to an air-tight glass container in the refrigerator for up to 4 days.
Reheating. To reheat, preheat the oven to 350 degrees F. Transfer the pizza slices to an oven-safe plate. Place in the oven for about 10 – 15 minutes, until warmed through.

- 1 cup chickpea flour
- 2 tbsp tapioca flour flour
- ¾ – 1 cup filtered water
- 1 tbsp extra virgin olive oil
- Sea salt & black pepper, to taste
SPICY OLIVE OIL SAUCE
- 2 tbsp extra-virgin olive oil
- 2 tbsp balsamic vinegar
- 4 garlic cloves, minced
- 1 tsp red pepper flakes
- 1 tsp dried basil
- 1 dried oregano
- Sea salt & black pepper, to taste
PIZZA TOPPINGS
- 2 large red bell peppers, sliced
