A batch of homemade vegan chili is always a comfort food staple during the fall and winter months, but one evening, I decided to take it up a notch and stuff the classic in some roasted acorn squash. My oh my, it’s perfection!
Essentially, this Vegan Chili Stuffed Acorn Squash is a mash-up of smoky and subtly sweet flavors. The best part is that it’s relatively easy to make. As the acorn squash gets roasted, it provides plenty of time to prepare the homemade vegan chili, keeping things efficient in the kitchen.
Once the acorn squash is hot out of the oven, stuff it with as much of that vegan chili as it can hold. Next, garnish with whatever your heart desires for a super cozy meal!

How to Roast, Fill, and Serve Your Vegan Stuffed Squash
- Acorn Squash. Preheat the oven to 400°F (200°C) and line a sheet pan with parchment paper. Wash the squashes, cut a tiny piece off the top and bottom (so they can sit upright), then cut them in half crosswise and scoop out the seeds. Coat the squashes with the avocado oil and place the halves facing down on the baking sheet. Roast for 30–40 minutes, until their flesh is easily pierced with a fork.
- Sauté the Chili. To a large pot, add the avocado oil (or a splash of spring water), chopped onion, and chopped bell pepper. Sauté for 5 minutes, then stir in the garlic and seasonings.
- Cook the Chili. Once fragrant, add in the beans, tomatoes, and water. Bring to a boil, then simmer for 15 minutes, uncovered.
- Blend the Chili. When the chili has thickened up a bit, pulse it a few times with an immersion blender right in the pot. Alternatively, transfer a few ladles of it to a high-speed blender and blend until smooth, then mix it back into the pot.
