It’s an easy blended baked oats recipe that is vegan, gluten-free, and tastes incredibly decadent!

If you’ve never blended oats before baking them, then you’re missing out. Not to worry though, this vegan blended oats recipe will solve that problem real quick. By blending oats the end result is light, fluffy, almost like a cake texture, but tastes like dessert for breakfast, especially when you add dark chocolate chips to the mix.

It’s a blended baked oats recipe that closely resembles the taste of a warm slice of my chocolate chip banana bread recipe. With that said, it’s pretty much an individual chocolate chip banana bread in one bowl. What more could you ask for?

For this vegan blended baked oats recipe, you only need a few ingredients to make your individual chocolate chip banana bread.
- Organic Gluten-Free Rolled Oats: I used old fashioned rolled oats, but quick oats work as well. However, I do not recommend using steel cut oats, because it turns out too thick.
- Organic Banana: Adding half of a ripe banana to the recipe makes this breakfast sweet. Also, the more ripe the banana, the sweeter your breakfast will be.
- Organic Unsweetened Non-Dairy Milk: To blend up the oats.
- Organic Pure Maple Syrup: Although you do not need to add more sweetness, but maple syrup does a good job of making this oatmeal tastier.
- Organic Vanilla Extract: Just a little for some extra flavor.
- Organic Baking Powder: Since this is an egg-free blended oats recipe, baking powder will help insure a nice and fluffy texture.
- Organic Ground Flax Seeds: Ground flax seeds are loaded with nutrients, high in omega-3 fats, rich in dietary fiber, and you can’t even taste them. They are completely optional, and be substituted with chia seeds, so no problem if you don’t have them…yet!
- Organic Dark Chocolate Chips: It wouldn’t be chocolate chip banana bread without any chocolate chips. Adding dark chocolate chips, takes this blended baked oats to whole new level.

How to make Vegan Blended Baked Oats
This blended baked oatmeal is so simple, it only requires three steps: blend, mix, and bake.
- Blend: Add the rolled oats, banana, non-dairy milk, pure maple syrup, ground flax seeds, baking powder, and vanilla extract, into a a high-speed blender. Blend on high until smooth and creamy.


- Mix: Mix in the dark chocolate chips.

- Bake: Transfer into a greased ramekin, top with additional dark chocolate chips and a few slices of banana. Bake at 350ºF for 25 minutes and enjoy!

Can I double this recipe?
Absolutely! Just double the amount of ingredients and make multiple servings at once!
Can I make it in advance?
Blended baked oats is a great option for meal prep. Once baked, cooled, and covered, you can either store it in the fridge for 4-5 days or in the freezer for 1-2 months.
- Fridge: Microwave for 30-45 seconds or place back into the oven at 350ºF for 10 minutes.
- Freezer: Microwave for 60 seconds or place back into the oven at 350ºF for 15 minutes.
