I’ll be the first to admit, this isn’t your typical average bake, as it doesn’t contain any tortillas. Not to worry though, because with the addition of butternut squash it adds the perfect level of heartiness, nutrition, & natural sweet flavor. Plus, it makes this enchilada bake both gluten and grain free!

- Organic Green Bell Pepper: I used red, but you can certainly use any color that you desire or a combination of them.
- Organic Yellow Onion: Just like the bell peppers, any color will work!
- Organic Red Enchilada Sauce: Duh?! It wouldn’t be enchiladas without it. I used red, but you can certainly use green. My favorite brand is Siete Foods.
- Organic Cashew Queso: My homemade and vegan cashew queso is coated over the entire dish.
- Organic Avocado: For some extra creamines, as well healthy fats to this vegan stuffed pepper recipe. You can dice it, slice it, or mash it into guacamole. Whatever floats your boat!
- Organic Cilantro: For topping! If you’re not a fan you can leave it out or add more if you are!
How To Make
- Cashew Queso. Combine all the ingredients to a high-speed blender and blend until totally smooth. If the sauce is thicker than you’d like, add water by the tablespoon until it’s the right consistency for you.
- Prepare. Preheat the oven to 425 degrees F. In a large casserole safe dish, mix together the ingredients until well combined. Transfer to the oven, uncovered, and bake for 30 – 35 minutes.
- Serve. Remove from the oven. Top with sliced avocado and fresh cilantro, if desired. Enjoy!

- Soak Cashews: Be sure to soak your organic raw cashews in hot water for about 10 minutes to soften. This ensures that the queso is creamy + smooth.

Fridge Storage. Transfer to an air-tight glass container & refrigerate for up to 4 days.
Reheating. To reheat, preheat the oven to 350 degrees F. Transfer to an oven-safe bowl. Place in the oven for 10 – 15 minutes, until warmed through.

- ½ cup raw cashews
- 2 tbsp tomato paste
- 1 tsp chili powder
- ½ tsp smoked paprika
- 2 tbsp nutritional yeast
- 1 tsp garlic powder
- 1 tsp onion powder
- Sea salt & black pepper
CASSEROLE
- 1 small butternut squash, peeled & cubed
- 1 yellow onion, chopped
- 1 green bell pepper, chopped
- 1 (15-oz) can black beans, drained
- 1 cup red enchilada sauce
TOPPINGS
- Avocado(s)
- Fresh cilantro
