While I have seen several barbecue chicken stuffed sweet potatoes out there, I felt it was my obligation to share a healthy plant-based alternative. Instead of using a bird, we’ll be cooking up some shredded jackfruit. Don’t worry, it’s very flavorful, so delicious, and almost reminds me of shredded chicken. The trick to making jackfruit super tasty is cooking it in your favorite BBQ sauce.
Even though we could stop with just the jackfruit, along with sweet potato, I like it to take it up a notch. Thus, I love topping it off with some homemade coleslaw. Trust me, it’s a game-changer!

- Organic Sweet Potato: The star of this recipe! I used garnet sweet potatoes, but you can technically use any type of potato you love!
- Organic Jackfruit: You want to look for organic young green jackfruit in brine.
- Organic BBQ Sauce: Duh?! You can use any BBQ sauce that you like. I personally love Good Food For Good Organic Classic BBQ Sauce, which is made with organic and clean ingredients. You can purchase it at any health foods store or Amazon.
- Organic Coleslaw: A cooling + tangy vegan coleslaw mix gets topped with these stuffed sweet potatoes.
How To Make
- Roast the Potatoes. Preheat the oven to 425 degrees F and line a large baking sheet with parchment paper. Place sweet potatoes on a baking sheet and prick with a fork. Place in the oven and bake for 45 – 55 minutes.
- Jackfruit. Rinse and drain jackfruit. Use a fork to “pull” it so it has a stringy texture. Heat a large skillet over medium. Once hot, add the jackfruit and cook for 2 – 3 minutes. Stir in the BBQ sauce and spring water. Coat until combined. Cook for 10 – 15 minutes, stirring occasionally.
- Coleslaw. In a large mixing bowl, add all of the ingredients, except the coleslaw mix, and whisk until combined. Add the coleslaw mix and toss until evenly combined. Recommended: store in the refrigerator until ready to serve.
- Assemble. When the sweet potatoes are fork tender, remove from the oven and let rest for 5 minutes. Slice the sweet potatoes in half lengthwise, carefully keeping them intact. Pinch the sides together to squeeze and open up the center. Alternatively, slice the potatoes lengthwise and serve as halves. Top with BBQ jackfruit & coleslaw. Enjoy!
Tips for Making Vegan Stuffed Sweet Potatoes Perfectly
- Bake the Sweet Potato First: While the sweet potatoes are baking in the oven you can prepare the sweet potato stuffing.
- Use Large Even-Sized Sweet Potatoes: You want to make sure the sweet potatoes have enough room in them to stuff. If you use small or thin sweet potatoes it will make it more difficult to stuff them. Try to get sweet potatoes that are all the same size and shape so they all cook evenly.
- Poke Holes in the Sweet Potatoes: It’s best to poke holes in the sweet potatoes before baking. This allows the steam to escape from the potatoes while they cook. This will prevent the chance of your sweet potato exploding in the oven! (it’s rare, but it can happen).
- Organic BBQ Sauce: You can use any bbq sauce that you like. I personally love Good Food For Good Organic Classic BBQ Sauce, which is made with organic and clean ingredients. You can purchase it at any health foods store or Amazon.
- Organic Coconut Yogurt: Be sure to use a plain flavor, as well as a clean brand. My favorite coconut brands are The Coconut Cult, COCOYO, & Culina. They are truly about quality, while making the most delicious coconut yogurt ever.
- Organic Vegetables: For convenience, use packaged, pre-shredded cabbage, carrots, or coleslaw mix.
Storing & Reheating
As mentioned above, this recipe is perfect for leftovers & meal prep! Just be sure to let the sweet potatoes and filling cool completely before transferring to separate air-tight glass containers.
Fridge Storage. Transfer to sweet potatoes and filling, to separate air-tight glass containers. Refrigerate for up to 4 days.
Reheating. To reheat, preheat the oven to 350 degrees F. To a baking sheet, stuff the sweet potatoes with the BBQ jackfruit. Place in the oven for 10 – 15 minutes, until warmed through. To serve, pair with coleslaw.
