Crispy chipotle chickpeas are roasted to perfection alongside tender broccoli & vibrant red onion, then served over a sweet potato mash infused with honey mustard. The dish is finished with an extra drizzle of dairy-free honey mustard sauce that beautifully ties all the flavors together.

Ingredients
- Organic Chickpeas: Provide a crispy texture along with fiber & plant-based protein to keep you full & satisfied.
- Organic Sweet Potato Puree: The base for our sweet potato mash. This is simply pureed sweet potatoes! Farmer’s Market Foods makes a great organic option, or you can easily make your own at home.
- Organic Broccoli Florets: Use fresh or frozen—both work wonderfully in this recipe!
- Organic Red Onion: Adds a subtle sharpness & depth of flavor.
- Organic Honey Mustard: A dairy-free combination of raw tahini, honey, Dijon mustard, fresh lemon juice, sea salt, & black pepper.
- Organic Spices: Chipotle chili powder, ground cumin, paprika, garlic powder, sea salt, & black pepper.
- Organic Avocado Oil: My go-to cooking oil—neutral in flavor & perfect for roasting at high heat.

How to Make
- Chickpeas & Vegetables. Preheat the oven to 425°F (220°C) & line a sheet pan with parchment paper. On one side of the pan, toss the chickpeas with the seasonings & avocado oil. On the other side, toss the vegetables with the seasonings & avocado oil. Bake for 20–25 minutes, flipping both chickpeas & vegetables halfway through, until crispy & tender.
- Honey Mustard. In a mixing bowl, whisk together all the honey mustard ingredients. Add water gradually, a little at a time, until you reach a semi-thick, pourable consistency. Set aside.
- Sweet Potato Mash. In a large bowl, combine the warm sweet potato mash with half of the honey mustard. Mix until smooth & well incorporated.
- Serve. Divide the sweet potato mash evenly among serving bowls. Top with the roasted chickpeas & vegetables. Drizzle with the remaining honey mustard. Enjoy!

Top Tips for Perfecting Your Healthy Vegan Bowl
- Organic Sweet Potato Puree: I love using Farmer’s Market Foods, but you can easily make your own at home by roasting & blending sweet potatoes.
- Organic Raw Tahini: If you haven’t tried tahini yet, you’re missing out! It adds a delicious creaminess to the mash. No tahini? No worries—you can substitute with organic raw cashew butter or skip it altogether. Just keep in mind, without tahini, the mash will be spicier & less creamy.
- Organic Honey: Manuka honey, local raw unfiltered honey, or organic pure maple syrup to make it vegan will all work.
Storing & Reheating

Storing. Transfer the cooked ingredients to airtight glass containers & refrigerate for 3–4 days. For best freshness, store the chickpeas, veggies, & sweet potato mash separately & assemble your bowl just before eating. If meal prepping, portion individual servings in containers. Avoid adding the honey mustard until just before serving to keep everything fresh.
Reheating. Preheat your oven to 350°F (175°C). Transfer the ingredients to an oven-safe dish & heat for 10–15 minutes, or until warmed through. Drizzle with the honey mustard before serving & enjoy!

- ½ tsp ground cumin
