Ingredients
- Organic Beans: The beans are the staple for this BBQ bowl & they’re full of healthy fats and plant-based protein. I used organic white beans, but you can certainly use organic pinto beans.
- Organic BBQ Sauce: Duh?! You can use any bbq sauce that you like. I personally love Primal Kitchens BBQ Sauce, which is made with organic and clean ingredients. You can purchase it at any health foods store or Amazon.
- Homemade Organic Coleslaw: You read that right…homemade coleslaw! Coleslaw is super simple to make and this version is healthier and vegan!
- Organic Cauliflower Rice: We’ll be pairing this BBQ bowl with cauliflower rice instead of regular rice. Cauliflower rice isn’t technically rice, but it looks like rice. You can find organic pre-made cauliflower rice at your local health foods store.
How To Make
- Beans. Heat a small saucepan over medium heat. Stir in the drained beans and BBQ sauce. Simmer for 5 – 7 minutes or until everything is heating through.
- Coleslaw. Add all of the ingredients, except the coleslaw, to a high speed blender. Blend until smooth and creamy. Pour into a large mixing bowl with the coleslaw mix and stir until well combined. Recommended: store in the refrigerator until ready to serve.
- Serve. Divide cauliflower rice, BBQ beans, and coleslaw, between bowls. Enjoy!
Tips for Making Vegan BBQ Bowl Perfectly
- Organic Beans: I used organic great northern for this recipe, but another variety of white bean will work, such as cannellini or navy beans. Pinto beans will also work if you’re in a pinch.
- Organic Cashews: Be sure to soak your raw cashews before blending to ensure that the coleslaw dressing is smooth & creamy.
- Organic Vegetables: For convenience, use packaged, pre-shredded cabbage, carrots, or coleslaw mix.
- Organic BBQ Sauce: You can use any BBQ sauce that you like. I personally love Good Food For Good Organic Classic BBQ Sauce, which is made with organic and clean ingredients. You can purchase it at any health foods store or Amazon.
Storing & Reheating
This recipe is perfect for leftovers & meal prep! Just be sure to let the ingredients cool completely before transferring to an air-tight glass container.
Fridge Storage. Transfer ingredients to separate air-tight glass containers and refrigerator for up to 4 days. Assemble them when ready to enjoy.
Reheating. Optionally reheat by preheating the oven to 350 degrees F. Transfer the BBQ beans and cooked cauliflower rice to an oven-safe bowl. Place in the oven for about 10 minutes, until warmed through. To serve, pair with the coleslaw.
