Since we just celebrated the new year, I thought it would be fitting to do a green pasta recipe. Don’t let the color fool you though, because my Vegan Green Protein Pasta recipe is just as full of flavor, as it is with nutrition.
This vegan green pasta sauce is truly like any other. It’s vibrant in color, but is super creamy. A combination of sautéed spinach, green peas, nutritional yeast, and raw cashews, are all blended up to coat our protein pasta. If you have never had protein pasta, I highly recommend picking some up and swapping it out for the typical pasta. For this recipe, I used Tolerant’s Organic Green Lentil Rotini. I promise you, it tastes just as good and you get the protein benefits.
So if it’s the beginning of the year, near the end of the year, or somewhere in between there is no better time to get your greens + protein inn with this vegan pasta recipe!

Ingredients
- Organic Spinach: The trick to making the green sauce super vibrant is sautéed spinach. Please don’t skip this step. If you don’t have spinach, kale will do.
- Organic Frozen Green Peas: Sounds strange, but adds to the green color, as well as some plant protein
- Organic Garlic: Make sure to use fresh garlic and not garlic powder. This ingredient is crucial to build flavor.
- Organic Raw Cashews: Cashews provide the most creamy consistency to the green sauce. Simply soak the cashews to soften then blend!
- Organic Seasonings: We’re keeping it simple here, nutritional yeast, sea salt, & black pepper!
- Organic Lemon: Freshly squeezed into the sauce to add some zesty flavors.
- Organic Rotini Pasta: It wouldn’t be a pasta recipe without it! I love using pasta noodles that are made with one ingredient – lentil flour. I used Tolerant’s Organic Green Lentil Rotini. They taste just like the real deal and it’s high in protein.
How To Make
- Pasta. Cook the noodles according to package directions until al dente. Drain and set aside.
- Green Pasta Sauce. Heat the same pot over medium heat. Add the spinach, green peas, and minced garlic. Sauté for 3 – 4 minutes, or until the spinach is wilted.
- Blend. Transfer the remaining sauce ingredients to a high-speed blender. Blend until smooth & creamy.
- Combine. Pour the green sauce back to the pot, along with the cooked pasta, and toss to combine. If needed, add in a little filtered water or vegetable broth to loosen the sauce.
- Serve. Divide between bowls. Enjoy!
Tips for Making this Vegan Green Pasta Perfectly
- Organic Noodles: Rotini noodles can be swapped for any kind of pasta noodle that you have on hand!
- Protein Noodles: To amplify the protein, I love using pasta that are made with one ingredient – lentil flour. I used Tolerant’s Organic Green Lentil Rotini. They taste just like the real thing and it’s high in protein!
- Soak Cashews: Be sure to soak your organic raw cashews in hot water for about 10 minutes to soften.
Storing & Reheating
As mentioned above, this recipe is perfect for leftovers & meal prep! Just be sure to let the pasta cool completely before transferring to an air-tight glass container.
Fridge Storage. Transfer to an air-tight glass container in the refrigerator for up to 4 days.
Reheating. To reheat, simply transfer the pasta to a saucepan on the stovetop over medium heat, adding a little extra filtered water as needed until warm.

- 8 oz. lentil rotini pasta
GREEN PASTA SAUCE
- 4 cups fresh spinach
- 1 cup frozen peas
- 2 garlic cloves, finely minced
- ¼ cup nutritional yeast
- ½ cup raw cashews, soaked in hot water for 10 minutes
- 1 cup filtered water
- 2 tbsp fresh squeezed lemon juice
- Sea salt and black pepper, to taste
