Vegan Tzatziki Bowl with Roasted Cauliflower & Sweet Potato Fries is a hearty meal that is full of spice & comfort.
Although it’s a tad untraditional in the sense that we’re using coconut yogurt in place of Greek yogurt. However, it adds the perfect amount of tanginess. Trust me! Along with the spiced cauliflower florets, homemade sweet potato fries, avocado & cucumber slaw, fresh greens, as well as the tahini. My oh my. It’s so good.
This healthy vegan bowl recipe is seriously piled high with nutrient rich ingredients. It’s one of those meals that is filling, fueling, & just makes you feel-good. I know you’ll truly enjoy this one at first bite!

- Organic Sweet Potato: For this recipe I used organic garnet sweet potatoes, but any sweet potato works. I personally leave the skin on, because it adds extra fiber! Just be sure to scrub them well before slicing.
- Organic Avocado & Cucumber Slaw: A mix of creamy avocado, crisp cucumber, and fresh flavors. Don’t leave it out!
- Organic Coconut Tzatziki Sauce: A dollop or two of homemade vegan tzatziki is essential for this recipe. My version is made without grated cucumbers, which means it only takes a couple of minutes to whip up.
- Organic Tahini: Just a drizzle to complement this bowl.
- Organic Greens: Any greens work great for this vegan bowl. I used a combination of spinach, kale, & chard.
- Organic Herbs & Spices: Fresh cilantro, along with smoked paprika, ground cumin, onion powder, garlic powder, dried oregano, sea salt, & black pepper, are used to flavor this dish.
How To Make
- Roasted Cauliflower. Preheat oven to 425 degrees F. On a baking sheet, combine the cauliflower, avocado oil & spices. Toss well to evenly coat. Transfer to the oven and roast for 25 minutes, flipping halfway.
- Sweet Potato Fries. On a separate large baking sheet, toss the sweet potatoes with avocado oil, sea salt, and black pepper. Bake for 25 minutes, flipping halfway.
- Avocado & Cucumber Slaw. Add all of the slaw ingredients to a medium sized bowl. Mix until well combined.
- Coconut Tzatziki Sauce. In a bowl, combine all ingredients to a bowl and stir until fully combined.
- Assemble. Divide greens between bowls. Top the avocado & cucumber slaw, then the roasted cauliflower & sweet potato fries. Drizzle over the tahini and pair with a dollop of the tzatziki. Enjoy!
Tips for Making this Vegan Tzatziki Bowl Recipe Perfectly
- Cut the Sweet Potato Fries Thinly: Cut the sweet potatoes into fry-shaped. The thinner they are, the crispy they’ll get.
- Organic Cauliflower: Both fresh or frozen cauliflower works perfectly for this recipe.
- Organic Vegetables: Add in even more vegetables, such as carrots, bell peppers, tomatoes, etc.
- Baking: Be sure to use two separate baking sheets for the cauliflower & sweet potato fries. This ensures that everything doesn’t get overcrowded & ensures an even bake.
- Organic Coconut Yogurt: Be sure to use a plain flavor, as well as a clean brand. My favorite coconut brand is Culina. They are truly about quality, while making the most delicious coconut yogurt ever.
Storing & Reheating
This healthy vegan bowl recipe is perfect for leftovers & meal prep! Just be sure to let the ingredients cool completely before transferring to an air-tight glass container.
Fridge Storage. Transfer ingredients to separate air-tight glass containers and refrigerator for up to 4 days. Assemble them when ready to enjoy.
Reheating. To reheat, preheat the oven to 350 degrees F. Transfer the cauliflower and sweet potato fries to an oven-safe bowl. Place in the oven for about 15 minutes, until warmed through. To serve, pair with the greens, slaw, and tzatziki.

- Tahini
