Vegan Curry Roasted Vegetable Quinoa Bowls with Coconut Yogurt are a healthy recipe to nourish your body with. Cauliflower florets and sweet potatoes roasted to perfection in Indian spices, laid on a bed of fluffy quinoa and massaged greens, then paired with creamy tahini, as well as tangy coconut yogurt. It’s a flavorful and easy-to-make vegan bowl, perfect for a delicious weeknight dinner or meal prep option!

If you know me, you know I love curry. I find that I desire it more during the colder months, and that’s for the obvious reasons. As opposed to grabbing the saucepan, I grabbed the sheet pan when I was in the mood for a bit of curry spice.
You can call it a buddha bowl or a nourish bowl, but I would describe it as a feel-good bowl. Piled high with nutrient rich ingredients, this curry bowl recipe is full of warm comforting spice, while having a bit of tang to it, thanks to the coconut yogurt.
Side note on the coconut yogurt. Be sure to use a plain flavor. My favorite brand is Culina. They are truly about quality, while making the most delicious coconut yogurt ever. The texture is super thick, creamy, & like I mentioned above, tangy…making it a perfect match to our vegan curry bowl.
We start by tossing the cauliflower florets and sweet potatoes with avocado oil & spices. While the veggies roast, we assemble the bowls & the sauces. All you gotta do is add some greens to a bowl, prepare the quinoa, grab some coconut yogurt, and have your tahini ready to drizzle. Pretty easy & pretty tasty if you ask me.
This is the best vegan curry recipe when you’re in the mood for something different, yet equally delicious. It’s on the table in about 30 minutes and is full of flavor at every bite.

Ingredients
- Organic Cauliflower: Roasted & coated with curry spice, to transpire the perfect crispy texture.
- Organic Sweet Potato: For this recipe I used organic garnet sweet potato, but any sweet potato works in this recipe. I personally leave the skin on, because it adds extra fiber! Just be sure to scrub them well before chopping.
- Organic Herbs & Spices: Fresh cilantro, along with curry powder, ground cumin, turmeric powder, garlic powder, sea salt, & black pepper, are used to flavor this dish.
- Organic White Quinoa: To provide this vegan curry bowl recipe with nutty flavor, along with protein and fiber. You can use any color that you have on hand – white, red, or multi-color quinoa all work for this recipe.
- Organic Greens: Any greens work great for these vegan quinoa bowls. I used kale, but I think spinach or arugula would work nicely.
- Organic Pumpkin Seeds: For some extra healthy fats and added protein to this vegetable quinoa bowls, while providing a nice crunch.
- Organic Tahini: Just a drizzle to complement our vegan quinoa bowls.

How To Make
- Quinoa. Prepare quinoa as packaged instructions.
- Roasted Veggies. Preheat the oven to 425 degrees F. On a baking sheet, combine the cauliflower florets, diced sweet potatoes, avocado oil, & spices. Toss well to evenly coat. Transfer to the oven and roast for 25 minutes, flipping halfway.
- Kale. Begin by washing and drying your kale and chopping it into small pieces. Then add it to a large bowl with a healthy pinch of sea salt, the chopped cilantro, and fresh squeezed lemon. Using your clean hands to massage the kale.
- Assemble. Divide kale and quinoa between bowls. Top with roasted cauliflower & sweet potato. Drizzle over the tahini, sprinkle the pumpkin seeds, fresh cilantro, and pair with a dollop of coconut yogurt. Enjoy!
Tips for Making this Recipe Perfectly
- Organic Cauliflower: Both fresh or frozen cauliflower works perfectly for this recipe.
- Organic Vegetables: Add in even more vegetables, such as roasted carrots and/or bell peppers, fresh cucumber and/or tomatoes, etc.
- Organic Protein: Feel free to add even more plant protein – such as roasted chickpeas or cooked lentils.

- Baking: Be sure to flip the vegetables halfway. This ensures even baking.
Storing & Reheating
As mentioned above, these vegetable quinoa bowls recipe is perfect for leftovers & meal prep!
Fridge Storage. Transfer ingredients to separate air-tight glass containers & refrigerate for up to 4 days.
Reheating. To reheat, preheat the oven to 350 degrees F. Transfer the roasted veggies and quinoa to an oven-safe bowl. Place in the oven for about 15 minutes, until warmed through. To serve, pair with the kale, tahini, seeds, cilantro, and coconut yogurt.
