How to Make
- Sauté Onion & Garlic. In a large pot, add the chopped onion and minced garlic. Cook for 2–3 minutes until fragrant and translucent.
- Stir in the Seasonings. Add the seasonings. Cook for another 2–3 minutes, stirring frequently. If the mixture begins to stick, add a splash of water to keep it from drying out.
- Add Remaining Ingredients. Add the cubed butternut squash, black beans, canned tomatoes, and water to the pot. Stir everything together and bring the chili to a gentle boil.
- Simmer. Reduce the heat to medium-low and simmer uncovered for 20–25 minutes, or until the butternut squash is fork-tender.
- Blend for Texture. For a heartier, thicker chili, blend about ⅓ of the mixture using an immersion blender right in the pot. Or, carefully transfer ⅓ to a high-speed blender, blend until smooth, then return it to the pot and stir to combine.
- Serve. Ladle the chili into bowls and top with chilled avocado, fresh cilantro, or any of your favorite toppings. Enjoy!
