- Organic Marinade: A combination of extra-virgin olive oil, fresh lemon juice, Dijon mustard, & fresh garlic is used for the bean marinade.
- Organic Yellow Baby Potatoes: These small potatoes, often referred to as new potatoes, are the perfect addition to this salad.
- Organic Avocado: Make sure to use a ripe avocado for some extra healthy fats & creaminess.
- Organic Greens: Any greens work great. Baby spinach, arugula, chard, and/or massaged kale.

How to Make
- Baby Potatoes. Preheat the oven to 425 degrees F. Add the quartered potatoes to a baking tray lined with parchment paper. Toss with the avocado oil & seasonings. Bake for 20–25 minutes, flipping halfway.
- Marinate. Whisk all of the marinade ingredients in a mixing bowl until well combined.
- Combined. Add the drained beans to the marinade & set for at least 10 minutes, chilled or at room temperature.
- Serve. Divide greens of choice & roasted baby potatoes between bowls. Top with the marinated beans & avocado. Enjoy!

Reheating. To reheat, preheat the oven to 350 degrees F. Transfer the roasted potatoes to an oven-safe bowl. Place in the oven for 10–15 minutes, until warmed through. Give the marinated beans a good stir, slice up the avocado, massage the greens (if needed), & enjoy with the warm potatoes.
