- Cashew Sour Cream. To a high-speed blender, add the cashew sour cream ingredients and blend until smooth. If it’s too thick and gritty, add more spring water, one tablespoon at a time, until a creamy consistency is achieved.
- Combine. At the 15-minute mark, stir the cashew sour cream into the soup.

- 1 tbsp apple cider vinegar
- Sea salt and freshly ground black pepper, a pinch
