Roasted vegetable enchiladas have never tasted so good, and while I might be a little biased, this bake is a must-make.
Typically vegan enchiladas rely on beans, but this recipe goes without them in favor of protein-packed, fiber-filled quinoa. It provides a nice nutty essence and a light, fluffy texture that soaks up all of the enchilada’s components, including the colorful roasted vegetables, bold red enchilada sauce, and the dreamy, dairy-free cashew queso. Trust me, the beans won’t be missed, and besides, it’s a nice change-up.
The steps to prepare this roasted veggie enchilada casserole are simple, and it comes together in under an hour. It’s perfect for weeknights, and because it’s meal-prep approved, you can enjoy all of the Mexican flavors throughout the week!

Healthy Enchilada Bake Ingredients
- Organic Quinoa: This enchilada recipe goes without the beans and uses the superfood quinoa instead. Packed with protein and fiber, quinoa has a light, fluffy texture that soaks up all of the yummy enchilada flavors. Organic tricolor quinoa is what I used, but any variety will do.
- Organic Sweet Potato: Adds heartiness, naturally sweet nutritional benefits, and fiber to this vegetable enchilada bake. Organic butternut squash also makes a great swap too.
- Organic Red Onion and Bell Peppers: Any color combination works to add vibrancy, flavor, and nutrients. I used an organic red onion, red bell pepper, and yellow bell pepper.
- Organic Cauliflower Florets: A nutrient-dense way to boost vitamins and bulk up this roasted veggie enchilada casserole. Fresh or frozen do the trick.
- Organic Baby Spinach: Sneaks in some green goodness, stirred right into the bake without altering the flavor.
- Red Enchilada Sauce: A must-have for bold, zesty flavors. I recommend Siete Foods for a clean, delicious sauce that tastes as good as it reads.
- Organic Cashew Queso: Cheesy and dreamy cashew queso complements the other enchilada components beautifully without a drop of dairy.
- Organic Toppings: Avocado, lime wedges, and fresh cilantro are my tried-and-true garnishes, but feel free to add whatever you love.

Roasted Vegetable Enchiladas: Top Tips
- Soak the Cashews: If you don’t have a powerful blender, soaking the raw cashews in hot water for at least 10 minutes is recommended. This softens the cashews and ensures the queso blends into a smooth, creamy texture.
- Cashew Queso Consistency: If the cashew queso is difficult to blend, add more spring water one tablespoon at a time. The ideal consistency is thick yet smooth and pourable. The queso should be creamy without any grittiness and not overly thin.
- Enchilada Sauce: One of the cleanest enchilada sauce options available is from Siete Foods. Be sure to pick up a jar prior to preparing the healthy enchilada bake.
- Organic Vegetables: Feel free to customize with your favorite seasonal veggies. Substitute the sweet potato for butternut squash, experiment with different combinations of onions and bell peppers, and incorporate your favorite leafy greens for added variety and nutrition.
Storing and Reheating Quinoa Enchilada Bake
- Storing: Transfer the cooled roasted veggie enchilada casserole, without any toppings, to a glass storage container and refrigerate for up to 4 days.
- Reheating: To reheat, preheat the oven to 350°F (175°C). Transfer your portion to an oven-safe dish and warm in the oven for 10–15 minutes, until heated through. Enjoy with your favorite toppings!
