However, just like the nutrition, the flavor component still holds up. Thanks to bold spices and your favorite salsa.

- Organic Garlic: Make sure to use fresh garlic and not garlic powder. This ingredient is crucial to build flavor.
- Organic Cauliflower Rice: We’ll be using cauliflower rice instead of regular rice. Cauliflower rice isn’t technically rice, but it looks like rice. You can find organic pre-made cauliflower rice at your local health foods store.
- Organic Red Kidney Beans: Red kidney beans give this dish a boost of fiber and plant protein. If you don’t have red kidney beans, sub for pinto beans or black beans.
- Organic Salsa: Homemade or store bought both work. My favorite brand is Siete!
- Organic Crushed Tomatoes: If you don’t have crushed tomatoes, use diced tomatoes or double the amount of salsa!
- Organic Green Olives: Completely optional, but recommended!
- Organic Fresh Cilantro: A staple for this dish!
- Organic Spices: Ground cumin, smoked paprika, chili powder, sea salt, & black pepper, are used to infuse this vegan recipe.
How To Make
- Sauté. Heat oil in a large skillet, add the onion and bell peppers. Sauté for 5 minutes.
- Coat. Add the beans, garlic, and seasoning. Stir until well combined
- Cook. Stir in the cauliflower rice, salsa, & crushed tomatoes. Reduce heat to low and cook for 10 minutes.
- Stir in Cilantro. Once the cauliflower is cooked/defrosted, remove from heat and stir in the cilantro.
- Serve. Divide between bowls. Garnish with the green olives & extra fresh cilantro, if desired. Enjoy!

Storing & Reheating
As mentioned above, this recipe is perfect for leftovers & meal prep! Just be sure to let the rice & beans cool completely before transferring to an air-tight glass container.
Fridge Storage. Transfer to an air-tight glass container in the refrigerator for up to 4 days.
Reheating. To reheat, simply transfer the rice and beans to a large pot on the stovetop over medium heat, adding a little extra water as needed until warm.

- 1 red bell pepper, chopped
- 2 garlic cloves, minced
- 1 (15-oz) can red kidney beans
- ½ tsp chili powder
- ½ tsp ground cumin
- ½ tsp smoked paprika
- Sea salt & black pepper, to taste
- 2 cups cauliflower rice
- ½ cup salsa
- ½ cup crushed tomatoes
- ½ cup fresh cilantro, chopped
