This Vegan Single Serve Apple Crisp with Vanilla Protein Ice Cream is a healthy dessert recipe that is paleo-friendly too. It embodies all the flavors found in the classic apple pie, but in an individual portion!

When it comes to desserts, I’m usually a chocolate fan, but apple pie is a close second. After all, it is such an American classic.
While apple pie is great & all, it’s just me & the thought of creating a whole pie is pretty intimidating, which is why I created this Vegan Single Serve Apple Crisp with Vanilla Protein Ice Cream. The end result is still a 10/10, but the preparation is a breeze.
In my opinion, no apple pie is complete without a scoop of vanilla ice cream, or in this case homemade vanilla protein ice cream. It’s the perfect garnish, but if you don’t have an ice cream maker at home, a dollop of coconut yogurt or even coconut whipped cream will do the trick!

However, this nutrient-rich apple can be overlooked, as we tend to focus on the apple recipe vs. the nutrition standpoint. Nevertheless, knowledge is power and lets begin incorporating apples in more healthful ways!

Ingredients
- Organic Apple: Include your favorite! I used a honeycrisp for some extra sweetness.
- Organic Sweetener: I highly recommend using an organic unrefined sugar-free alternative. I love organic pure maple syrup for the apples & organic coconut sugar for the crisp.
- Organic Arrowroot Powder: This helps thicken the apple filling. If you don’t have it, not to worry!
- Organic Fresh Lemon Juice: For a bit of freshness.
- Organic Almond Flour: This is key for the crisp top! I haven’t tried it with other flours, but I’m sure they will work just fine!
- Organic Spices: A combination of organic ceylon cinnamon & organic nutmeg are essential for this healthy apple crisp recipe!
- Organic Coconut Oil: It’s relatively neutral & full of healthy fats!
- Organic Vanilla Protein Ice Cream: This is optional, but it truly takes this dessert next level! It’s created with organic full-fat unsweetened coconut milk, your favorite vanilla protein powder, & a medjool date.
How To Make
- Preheat. Preheat the oven to 350 degrees F.
- Apple. In a mixing bowl toss the diced apple with remaining ingredients until well combine.
- Crumble. In a mixing bowl combine all of the ingredients until well combined.
- Bake. Transfer the apples to a remakin & top with the crumble. Bake for 15 – 20 minutes.
- Ice Cream. Preferably make the ice cream in advance. Freeze the bowl of your ice cream maker overnight. When the bowl is frozen, add all of the ingredients to a high-speed blender & blend until smooth. Place the frozen bowl in the ice cream maker & churn for 20 – 25 minutes, until the ice cream is soft. Freeze for at least 2 hours.
- Serve. Enjoy with a scoop of the protein ice cream!
Tips for Making this Vegan Protein Dessert Perfectly
- Organic Apple: Include your favorite! I used Honeycrisp & left the skin on!
- Soft Apple: If you prefer your apples to be on the softer side, I recommend placing them in the ramekin & baking in the oven for 20 minutes, prior to adding the crumble on top to bake for another 15 – 20 minutes. 35 – 40 baking time total!
- Organic Ice Cream: It’s best to prepare the ice cream in advance. I would suggest at least 2 – 4 hours.
- No Ice Cream Option: If you don’t have an ice cream maker, no worries! You can top with organic plain coconut yogurt or homemade coconut whipped cream!
Storing & Reheating
This Vegan Single Serve Apple Crisp with Vanilla Protein Ice Cream is the perfect healthy dessert recipe to save for later!
Fridge Storage. Transfer crisp to an air-tight glass container & refrigerate for 4 – 5 days.
Optional Reheating. To reheat, preheat the oven to 350 degrees F. Transfer the crisp to an oven-safe bowl. Place in the oven for 10 – 15 minutes, until warmed through.

- 1 tsp pure maple syrup or coconut sugar
- ½ tsp arrowroot powder
- ½ tsp fresh lemon juice
- ¼ tsp ceylon cinnamon, plus more to taste
- ⅛ tsp nutmeg
CRUMBLE
- 2 tbsp almond flour
- 2 tsp pure maple syrup or coconut sugar
- 2 tsp coconut oil, melted
ICE CREAM
- ½ cup full-fat unsweetened coconut milk
- ½ cup unsweetened non-dairy milk
- 1 scoop vanilla plant protein
- 1 pitted medjool date, optional
Instructions
APPLE CRISP
- Preheat. Preheat the oven to 350 degrees F.
