It’s vibrant in color, packed with nutrition, & super easy to make. Best of all thought, it’s extremely flavorful.
While it is a hummus bowl recipe, what really makes this dish stand out is the shawarma roasted cauliflower. If you thought cauliflower couldn’t taste good, you just wait, because it’s mega-flavorful, thanks to the seasonings.

- Organic Cauliflower: Roasted & coated with spice, to transpire the perfect crispy texture.
- Organic Quinoa: To provide these bowls with nutty flavor, along with protein and fiber. You can use any color that you have on hand – white, red, or tri-color quinoa all work for this recipe.
- Organic Hummus: Homemade or store bought, whatever you got will work! My favorite brand is Hope Foods.
- Organic Vegetables: English cucumber, sauerkraut, & fresh greens, are what I used, but feel free to customize!
- Organic Herbs & Spices: Fresh basil, along with smoked paprika, ground cumin, dried oregano, turmeric powder, garlic powder, cayenne pepper, sea salt, & black pepper, are used to flavor this dish.
How To Make
- Roasted Cauliflower. Preheat oven to 425 degrees F. On a baking sheet, combine the cauliflower, avocado oil, & spices. Toss well to evenly coat. Transfer to the oven and roast for 25 minutes, flipping halfway.
- Quinoa. Prepare quinoa as instructed from the package.
- Assemble. Divide teh greens & the quinoa between bowls. Top with roasted cauliflower, fresh veggies, and herbs, along with a dollop of hummus. Enjoy!
