While it’s untraditional, to say the least, given the fact that there is absolutely no pasta or cheese involved, it’s without question delicious in its own special way. Fluffy quinoa replaces the pasta and gets coated in a creamy dairy-free cashew sauce that comes together in under 30 minutes.

How to Make

- ½ cup raw cashews, soaked in hot water for 10 minutes
- ¾ cup spring water, plus more to achieve desired consistency
- ⅓ cup nutritional yeast
- ½ tsp garlic powder
- ½ tsp Ceylon cinnamon
- ¼ tsp nutmeg
- Sea salt & black pepper, to taste
