Vegan Jackfruit Pot Roast is a cozy one-pot dinner that even meat eaters will enjoy. This vegan pot roast recipe includes all the essential veggies of the typical meal, but uses jackfruit as the star of the recipe. It’s a vegan take on a classic and is the perfect main dish for special occasions.

Ya’ll, do I have a dinner for you that will blow your mind…pot roast! Not just any typical pot roast. Jackfruit Pot Roast.
Hear me out, I know it may seem kind of strange to the many, but trust me on this one. This vegan pot roast includes melt in your mouth jackfruit, hearty veggies, and a umami-rich gravy. As you can see, it’s just like the typical roast, as it is still loaded with lots of wholesome veggies, but the main differentiation is the roast, as we will be using jackfruit. But don’t you worry, because it’s still delicious & even easier to make.
We start off by marinating the jackfruit with some seasoning for about 30 minutes or so, then we get cooking. Sautéing the onion with some fresh garlic, throw in the chopped veggies for a few more minutes, pour over the gravy, top with jackfruit, and into the oven it goes for about 45 minutes or so.
The results are incredible…with this healthy pot roast recipe, there is no fork needed, as the vegetables and jackfruit will just glide in half and melt into your mouth. Are you drooling yet?
What you’ll love most about this meal, is that it only requires one pot – a dutch oven. In all honesty, I was a little nervous to put my precious Caraway dutch oven to use – it was my first time using it in the oven, but boy am I glad that I did it. The results were fabulous.

Ingredients
- Organic Jackfruit: The star of this jackfruit pot roast recipe. You want to look for organic young green jackfruit in brine.
- Organic Pot Roast Seasoning: Garlic powder, onion powder, dried rosemary, dried thyme, sea salt & black pepper, are used to marinate our jackfruit.
- Organic Vegetables: It wouldn’t be a pot roast recipe without vegetables. I used red baby potatoes, carrots, onion, mushrooms, & celery.
- Organic Gravy: A combination of dijon mustard, coconut aminos, tomato paste, balsamic vinegar, arrowroot starch, and vegetable broth get whisked together to pour over our roast prior to baking.
How To Make
- Marinate the Jackfruit. Mix all of the ingredients for the pot roast seasoning in a small bowl. Drain + rinse the jackfruit and transfer to a large bowl. Sprinkle the seasoning over the jackfruit and gently massage with your hands, until seasoned completely. Let the jackfruit sit in the seasoning for at least 30 minutes.
- Sauté. In a dutch oven, add the avocado oil, onion, and garlic. Sauté for 3-4 minutes.
- Add Veggies. Add the carrots, celery, and potatoes to the dutch oven and stir all the ingredients together. Let the vegetables cook for 4-5 minutes.
- Combine Gravy Ingredients. Whisk together the gravy ingredients in a separate bowl and then pour the liquid over the vegetables. Place the jackfruit on top of the vegetables.
- Bake. Cover the dutch oven and bake for 45 minutes at 400 degrees F.
- Serve. Carefully remove from the oven and enjoy!

Fridge Storage. Transfer roast to an air-tight glass container in the refrigerator for up to 5 days.
Reheating. To reheat, preheat the oven to 350 degrees F. Transfer roast to an oven-safe bowl. Place in the oven for about 15 minutes, until warmed through. Alternatively, place in a microwave-safe bowl to reheat in the microwave.

POT ROAST SEASONING
- 2 (14-oz) cans young jackfruit, drained & rinsed
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried rosemary
- 1 tsp dried thyme
- Sea salt & black pepper, to taste
GRAVY
- 3 cups low-sodium vegetable broth
- 2 tbsp dijon mustard
- 2 tbsp coconut aminos
- ¼ cup balsamic vinegar
- ¼ cup tomato paste
- 2 tbsp arrowroot starch
VEGETABLES
- 1 tbsp avocado oil
- 1 white onion, diced
- 4 garlic cloves, minced
- 5 large carrots, peeled and cut into thirds
- 3 celery stalks, cut into thirds
- 1 lb. baby red potatoes, cut in half
- 1 cup baby bella mushrooms
Instructions
- Marinate the Jackfruit. Mix all of the ingredients for the pot roast seasoning in a small bowl. Drain + rinse the jackfruit and transfer to a large bowl.
