This Vegan Hippie Bowl with Chipotle Pecan Sauce recipe in particular is next-level delicious. From top to bottom, this bowl includes some of my favorite ingredients (which I know you’ll love as well), but the true hero is the sauce. More specifically, the chipotle pecan sauce. It’s a 10/10 delish!

- Organic Quinoa: To provide this bowl with nutty flavor, along with protein & fiber. You can use any color that you have on hand – white, red, or multi-color quinoa.
- Organic Sweet Potato: I used organic stokes purple sweet potato, for the pop of color & boost of nutrition. However, any sweet potato works in this recipe. I personally leave the skin on, because it adds extra fiber! Just be sure to scrub them well before chopping.
- Organic Carrots: Adds the perfect amount of sweetness, brightness, as well as some extra nutrients.
- Organic Cauliflower Florets: Fresh or frozen, to get roasted.
- Organic Microgreens: It adds extra nutrients & antioxidants. I used a broccoli, tuscan kale, rocket arugula, & garlic chives mix.
- Organic Kale: The base of this bowl recipe is kale!
- Organic Chipotle Pecan Sauce: Hence the name. My chipotle pecan sauce recipe is simple to make & adds a bit of spice to this bowl.
- Organic Avocado Oil: This is my favorite oil to use while baking, because it can withstand high cooking temperatures.
How To Make
- Quinoa. Prepare quinoa as package instructions.
- Chickpeas & Roasted Vegetables. Preheat the oven to 425 degrees F. Add the drained chickpeas & chopped vegetables to a baking tray lined with parchment paper. Drizzle with avocado oil & seasonings. Toss to combine & bake for 20 – 25 minutes, flipping halfway.
- Kale. Add the washed and chopped kale to a large mixing bowl along with the fresh lemon juice. Using your clean hands, massage for 1 – 2 minutes to soften the kale.
- Chipotle Pecan Sauce. To a food processor or a high-speed blender, add the sauce ingredients. Blend until smooth & creamy.
- Serve. Divide greens & quinoa between bowls. Top with the roasted vegetables, chickpeas, microgreens, & chipotle pecan sauce. Enjoy!

- Organic Vegetables: Feel free to customize based on what you have access to. Swap the microgreens for roasted broccoli florets, incorporate beets, use your favorite type of sweet potato. Truly make this recipe your own!

CHICKPEAS & ROASTED VEGETABLES
- 1 (15-oz) can chickpeas, drained
- 1 sweet potato, chopped
- 3 large carrots, thickly sliced
- 2 cups cauliflower florets, fresh or frozen
- 1 tsp garlic powder
- Sea salt & black pepper, to taste
- 1 tbsp avocado oil
KALE
- 5 cups kale, de-stemmed & chopped
- 1 tbsp fresh lemon juice
CHIPOTLE PECAN SAUCE
- ¾ cup spring water
- ½ cup raw pecans
- 1 tsp apple cider vinegar
- 2 tsp tomato paste
- 2 garlic cloves
- 1 tsp chipotle powder
- ½ tsp ground cumin
- 2 tbsp nutritional yeast
- 1 tbsp fresh lemon juice
- Sea salt & black pepper, to taste
SERVINGS
- ¼ cup microgreens
