This healthy Vegan Cheeseburger Salad recipe is a plant-based and deconstructed twist on the handheld classic. Lentil burger meat and your favorite burger toppings all over a bed of fresh greens. Top it off with a special burger sauce made with cashews, for a yummy weeknight meal!

If you’re looking for a healthy and plant-based alternative to the typical burger, I’ve got you covered with this Vegan Cheeseburger Salad. It’s all that you could desire in the typical handheld, but in a deconstructed form.
What makes this healthy cheeseburger salad recipe stand out from the rest is the lentil burger meat and the special burger sauce made with cashews. Now, I’m not here to judge, but a lot of vegan burger recipes out there – the web & the streets – are loaded with not so(y) good for you ingredients. The mock meat is just a no from me. I could go on, but I’ll save you from my rant.
Back to what you came here for, a tasty alternative to the typical burger. My version has it all, without the bun. It’s vegan approved, packed with nutrition, and loaded with flavor!
Why You’ll Love This Vegan Cheeseburger Salad Recipe
- Full of Flavor & Loaded with Nutrition: Just because this bowl is loaded with plant-based ingredients, doesn’t mean there is a lack of flavor.
- Quick & Easy: This vegan recipe comes together in under 30 minutes.
- Great for Meal Prep: This dish stores well in the fridge, making it a great recipe to meal prep for quick dinners throughout the week.

Ingredients
- Organic Green Lentils: This recipe calls for green lentils, to add some fiber + plant protein to this vegan burger salad. Just be sure to rinse them prior to adding them to the pot.
- Organic Vegetables: Cherry tomatoes, red onion, and pickles, are the ones I used, but feel free to customize to your liking.
- Organic Greens: Any greens pair great for this burger salad. Arugula, spinach, kale, and/or chard will all work.
- Organic Seasonings: Smoked paprika, ground cumin, cayenne pepper, dried oregano, garlic powder, onion powder, sea salt, & black pepper.
- Organic Special Burger Sauce: Essential! Unlike the typical, my version is made with raw cashews to achieve that rich and creamy consistency.
How To Make
- Lentil Burger Meat. Cook according to package instructions, then stir in the spices.
- Cashew Special Burger Sauce. Combine all the ingredients in a high-speed blender and blend until totally smooth. If the sauce is thicker than you’d like, add water by the tablespoon until it’s the right consistency for you.
- Assemble. Divide the greens and lentil burger meat between bowls. Top with the veggies, a drizzle of the sauce, and sesame seeds, if desired. Enjoy!
Tips for Making this Vegan Cheeseburger Salad Perfectly
- Rinse Lentils: Be sure to rinse them prior to adding them to the pot, as this removes any bitterness.
- Organic Vegetables: Feel free to garnish with your favorite burger toppings!
- Soak Cashews: Soak your organic raw cashews in hot water for about 10 minutes to soften. This ensures that the special burger sauce is creamy + smooth.
Storing & Reheating
This recipe is perfect for leftovers & meal prep! Just be sure to let the lentil burger meat cool completely before transferring to an air-tight glass container.
Fridge Storage. Transfer to an air-tight glass container in the refrigerator for up to 4 days.
Reheating. To reheat, simply transfer the lentil burger meat to a saucepan on the stovetop over medium heat, adding a little extra water or broth as needed until warm. Serve with the remaining ingredients.
