- Organic Baby Bella Mushrooms: For some extra heartiness & nutrition.
- Organic Yellow Onion: I used yellow, but use what you’ve got on hand.
- Organic Bell Peppers: The combination of green & red is what I used, but any color works.
- Organic Spices: Keeping it simple with some Cajun seasoning, garlic powder, sea salt, & black pepper.
- Organic Cauliflower Rice: We’ll be using cauliflower rice instead of regular rice. Cauliflower rice isn’t technically rice, but it looks like rice. You can find organic pre-made cauliflower rice at your local health foods store.
- Organic Greens: Any greens work great. Baby spinach, arugula, and/or kale.
- Organic Avocado: Fresh, ripe, & sliced avocado completes this vegan nourish bowl.
How To Make
- Roasted Vegetables. Preheat the oven to 425 degrees F. Line a rimmed baking sheet with parchment paper. Add the chopped vegetables on the baking sheet, drizzle with oil & spices. Arrange in a single layer & bake for 20 – 25 minutes, flipping halfway.
- Assemble. Divide the fresh greens, cooked cauliflower rice, warmed beans, roasted vegetables, & sliced avocado between bowls. Enjoy!

Tips for Making this Vegan Cajun Bowl Recipe Perfectly
