It’s easy-to-make, hearty, & the perfect vegan dinner!

While most vegan nourish bowl recipes use chickpeas as the main source of protein, I thought it was time to switch it up a bit & swap for cooked lentils. My oh my, why did I wait so long?!
The end result is amazing every time, even if you need to swap some of the ingredients. I’ve listed some options further down in the post, so that you can enjoy this nourish bowl with whatever you’ve got on hand!

Ingredients
- Organic Lentils: Lentils are full of fiber & packed with protein. I used organic green lentils, but brown would work!
- Organic Butternut Squash: I used honeynut squash, but regular butternut squash will do! You can buy a whole organic butternut squash and chop it yourself or you can buy pre-cut organic butternut squash!
- Organic Brussel Sprouts: If you don’t have those on hand, swap for fresh or frozen broccoli florets.
- Organic Cauliflower Rice: We’ll be using cauliflower rice instead of regular rice. Cauliflower rice isn’t technically rice, but it looks like rice. You can find organic pre-made cauliflower rice at your local health foods store.
- Organic Kale: For the base of our nourish bowl. However, any greens that you have on hand will work!
- Organic Savory Tahini Dressing: My tahini dressing is super creamy, citrusy, & super savory. It complements this nourish bowl perfectly. Don’t leave it out!
- Organic Toppings: Sliced avocado & a sprinkle of hemp seeds, adds some extra healthy fats + nutrients.
How To Make
- Roasted Vegetables. Preheat your oven to 400 degrees F. Add the butternut squash & brussel sprouts to a baking tray lined with parchment paper. Toss with the avocado oil & seasonings. Bake for 20 – 25 minutes, flipping halfway.
- Lentils. Prepare the lentils according to package instructions.
- Cauliflower Rice. In a separate skillet, warm the cauliflower rice.
- Kale. Add chopped kale to a large mixing bowl along with the lemon juice. Massage with clean hands for 1 – 2 minutes to soften the kale. Set aside.
- Savory Tahini Dressing. In a mixing bowl, combine the dressing ingredients. Then add water a little at a time until a semi-thick, pourable dressing is achieved. Set aside.
- Assemble. Divide the massaged kale between bowls. Top with the warm cauliflower rice, roasted veggies, & cooked lentils. Add the sliced avocado, a drizzle of tahini dressing, & a sprinkle of hemp seeds. Enjoy!
Tips for Making this Vegan Nourish Bowl Perfectly
- Always Massage the Kale. Trust me on this one. Kale leaves can be very tough & chewy if not messaged. So, make sure to massage the kale leaves for at least 2 minutes – you’ll get a nice hand workout in.
- Organic Butternut Squash: I used honeynut squash for this bowl recipe, but butternut squash will do! You can either peel and chop your butternut squash or buy it pre chopped. Whatever is best for you.
- Swap the Squash: Not a fan of butternut squash? No worries! Swap for acorn squash or delicata squash instead.
- Organic Cauliflower Rice: You can find organic pre-made cauliflower rice at your local health foods store.
- Organic Vegetables: Roast up some more vegetables, such as cauliflower florets, broccoli florets, beets, or asparagus.
Storing & Reheating
As mentioned above, this Vegan Butternut Squash & Lentil Nourish Bowl is the perfect healthy recipe for leftovers & meal prep!
Fridge Storage. Transfer ingredients to separate air-tight glass containers & refrigerate for up to 4 days.
Reheating. To reheat, preheat the oven to 350 degrees F. Transfer the lentils, veggies, & cauliflower rice, to an oven-safe bowl. Place in the oven for 10 – 15 minutes, until warmed through. To serve, pair with the kale & remaining toppings.
