Without fail, Friday nights mean vegan enchilada bakes in my home, and with pumpkin season officially here, it’s the perfect excuse to give this classic dish a seasonal twist!
The true star of this recipe is the creamy pumpkin sour cream sauce. It’s a creamy and tangy combo of canned pumpkin puree with my homemade cashew sour cream. And while this vegan enchilada bake skips the tortillas, you won’t miss them at all, trust me! The roasted veggies and protein-packed black beans come together to create a hearty filling for a healthy, plant-based dinner.

- Organic Toppings: I like to finish mine with avocado, extra cashew sour cream, pumpkin seeds, fresh cilantro, and lime slices. But feel free to customize your toppings however you like!
How to Make
- Roasted Veggies. Preheat the oven to 425°F (220°C). Toss chopped veggies with avocado oil on a parchment-lined baking sheet. Roast for 15–20 minutes, flipping halfway for even roasting.
- Cashew Sour Cream. Blend all cashew sour cream ingredients in a high-speed blender until smooth & creamy. Add 1–2 tablespoons of spring water if needed to reach your preferred consistency.
- Mix. In a large bowl, combine ¾ of the cashew sour cream with the pumpkin puree and spices until fully incorporated. Then, gently fold in the black beans and roasted vegetables, ensuring everything is evenly coated.
- Bake. Transfer mixture to a casserole-safe dish. Bake uncovered at 425°F (220°C) for 10–15 minutes, until warmed through and bubbly.
- Serve. Top your bake with avocado, extra cashew sour cream, pumpkin seeds, fresh cilantro, and lime slices. Enjoy!

Storing. Transfer leftovers to an airtight glass container and refrigerate for up to 4 days.
Reheating. Preheat the oven to 350°F (175°C). Place the bake in an oven-safe dish and warm for 10–15 minutes until heated through. Serve with your favorite toppings and enjoy!
