Bright, beautiful, & beyond creamy, this Vegan Beet Quinoa Risotto is truly the perfect recipe to impress your loved one(s)!
While there is no actual risotto in this recipe, the quinoa takes its place & it doesn’t disappoint. Quinoa provides a similar texture, but it’s protein-packed & fiber-filled.
Don’t get me wrong, the quinoa is necessary, but the cashew beet cream is the star. If you’re concerned about the earthy beet flavor, don’t worry! The cashew cream, along with a few other ingredients mellows it out & results in a pretty pink color.
Oh & even though this dish was inspired for Valentine’s Day, it can be enjoyed on a weeknight evening. No matter the occasion, everyone will enjoy it!

Ingredients
- Organic Quinoa: Instead of risotto, we’re using quinoa to provide this dish with nutty flavor, along with protein & fiber. You can use any color that you have on hand – white, red, or multi-color.
- Organic Beets: For a pop of color & nourishment. I specifically use Love Beets Organic Classic Vinegar Beets, because there is no need to roast.
- Organic Raw Cashews: Cashews provide the most creamy consistency to the beet sauce. Simply soak the cashews to soften, then blend!
- Organic Garlic: Fresh garlic or organic garlic powder both work perfectly for the beet sauce.
- Organic Seasonings: We’re keeping it simple here, sea salt & black pepper!
- Organic Lemon: Freshly squeezed into the sauce to add some zesty flavors.
- Organic Pistachios: A sprinkle of organic pistachios adds some extra plant-based protein, healthy fats, & extra color.
How To Make
- Quinoa. Prepare quinoa as packaged instructions. Set aside
- Bake. If you’re using pre-cooked beets, skip to step 3. Preheat oven to 400 degrees F. Add the chopped beets & garlic on a baking tray lined with parchment paper. Bake for 15 – 20 minutes, flipping halfway.
- Blend. Transfer the roasted beets/pre-cooked beets & garlic/garlic powder to a high-speed blender, along with the remaining sauce ingredients. Blend until smooth & creamy.
- Combine. Pour the beet sauce into the cooked quinoa pot. Mix to combine. If needed, add in a little spring water or vegetable broth to loosen the sauce.
- Serve. Divide between bowls. Garnish with pistachios, if desired. Enjoy!
Tips for Making this Vegan Beet Quinoa Risotto Perfectly
- Organic Quinoa: You can use any color that you have on hand – white, red, or multi-color all work.
- Organic Beets: Either cook your beets prior to blending or buy pre-cooked ones (that’s what I did). I used the brand Love Beets Organic Classic Vinegar Marinated Baby Beets.
- Soak Organic Raw Cashews: Be sure to soak your organic raw cashews in hot water for about 10 minutes to soften.
Storing & Reheating
As mentioned above, this Vegan Beet Quinoa Risotto is the perfect healthy recipe for leftovers & meal prep!
Fridge Storage. Transfer risotto to an air-tight glass container & refrigerate for up to 4 days.
Reheating. To reheat, transfer the quinoa risotto to a saucepan on the stovetop over medium heat, adding a little extra spring water as needed until warm.

- 1 tbsp fresh squeezed lemon juice
