While we’re swapping the bird (chicken) for shredded jackfruit, it’s still very delicious and almost reminds me of shredded chicken. The trick to making jackfruit super tasty is coating it with your favorite BBQ sauce.
Even though the barbecue glazed jackfruit could be enjoyed on its own, I like to take it up a tad. Thus, I love pairing it with some cashew infused coleslaw and homemade sweet potato fries. In my taste bud opinion, it’s the ultimate vegan BBQ bowl.

- Homemade Organic Coleslaw: You read that right…homemade coleslaw! Coleslaw is super simple to make and this version is healthier and vegan!
- Organic Sweet Potato: For this recipe I used organic garnet sweet potato, but any sweet potato works in this recipe. I personally leave the skin on, because it adds extra fiber! Just be sure to scrub them well before slicing.
- Organic Avocado Oil: Avocado oil is my go-to cooking oil, because it’s neutral in flavor & it can be used to cook at high-heat temperatures.
How To Make
- Sweet Potato Fries. On a large baking sheet, toss the sweet potatoes with avocado oil, sea salt, and black pepper. Bake for 20 – 25 minutes, flipping halfway.
- Jackfruit. Rinse and drain jackfruit. Use a fork to “pull” it so it has a stringy texture. Heat a large skillet over medium. Once hot, add the jackfruit and cook for 2 – 3 minutes. Stir in the BBQ sauce and spring water. Coat until combined. Cook for 10 – 15 minutes, stirring occasionally.
- Coleslaw. Add all of the ingredients, except the coleslaw, to a high-speed blender. Blend until smooth and creamy. Pour into a large mixing bowl with the coleslaw mix and stir until well combined. Recommended: store in the refrigerator until ready to serve.
- Serve. Divide the BBQ jackfruit, coleslaw, and sweet potato fries, between bowls. Enjoy!
