How to Make This Easy Vegan Red Lentil Curry Recipe
- Sauté the Onion & Spice It. Warm a large pot over medium heat. Add the diced onion and sauté for 3 minutes. Once soft, add the minced garlic and spices. Stir until well combined.
- Cook. Add the sweet potatoes, cauliflower florets, rinsed red lentils, tomatoes, coconut milk, and spring water. Bring to a boil and simmer for 20–25 minutes, uncovered, stirring every 5 minutes or so.
- Blend. For an extra-thick and creamy curry, pulse with an immersion blender directly in the pot. a couple of times. Alternatively, scoop out a few ladles and transfer it to a high-speed blender. Blend until smooth and stir back into the pot.
- Serve. Divide the vegan curry between bowls and garnish with fresh cilantro. Enjoy!

- Organic Lentils: Please don’t substitute with black, green, or brown lentils here, as they will cook differently.
- Organic Full-Fat Unsweetened Coconut Milk: Quality matters, and the brand of coconut milk can make or break the curry. I recommend Native Forest, as their coconut milk only contains organic coconut milk and filtered water. No gums, additives, or fillers!
- Don’t Skip the Blend: Blending about a third of the curry is highly recommended, as it thickens it up and creates a velvety consistency.

- 1 yellow onion, diced
- 3 garlic cloves, minced
- 1 tbsp curry powder
- 1 tsp ground cumin
- 1 tsp ground turmeric
- Sea salt & black pepper, to taste
- 1 large sweet potato, chopped
- 2 cups cauliflower florets
- 1 cup dry red lentils, rinsed
- 1 (18.3-oz) jar diced or crushed tomatoes, Jovial Foods
- 1 (13.5-oz) can full-fat unsweetened coconut milk
- 2 cups spring water, plus more to achieve desired consistency
