This vegan Sweet Potato Black Bean Chili recipe is full of flavor and is easy to make. Featuring hearty sweet potatoes, protein-rich black beans, fire-roasted tomatoes, and a homemade chili blend. It’s the perfect cold weather meal and will become your winter staple at first bite!

Honestly, there is nothing better than a nice big pot of vegan chili cooking on a chilly day. In my opinion, it’s the ultimate comfort food for an easy weeknight meal!
This vegan Sweet Potato Black Bean Chili recipe truly is perfect. Majority of the ingredients you already have in your pantry and all that is required is to chop the veggies + toss in a pot.
While that may just sound a tad too easy, don’t let the simplicity undermine the end result. Even though there isn’t any meat, I promise you that this vegan chili recipe is super hearty, filling, and flavorful. While the plant-rich nutrients are ample enough, I find that blending a portion of the chili takes it up a notch. So if you can please do it!
Just don’t skimp out with the toppings! I love chilled + diced avocado and fresh cilantro. I find that the chilled toppings compliment the (temperature) hot vegan chili down. So good & so delicious for a cozy chilly winter evening!

Ingredients
- Organic Avocado Oil: Avocado oil is my go-to cooking oil, because it’s neutral in flavor & it can be used to cook at high-heat temperatures.
- Organic Onion: A staple for any chili! I used a medium yellow onion, but use what you have on hand!
- Organic Garlic: Make sure to use fresh garlic and not garlic powder. This ingredient is crucial to build flavor.
- Organic Beans: The beans are the staple for this chili and they’re full of healthy fats and plant-based protein. I used organic black beans, but you can certainly use organic red kidney beans or organic pinto beans.
- Organic Sweet Potato: It wouldn’t be sweet potato chili without it! The sweet potato can be peeled or cooked with the skin on. I personally leave the skin on, because it adds extra fiber! Just be sure to scrub them well before chopping. Oh and I used garnet sweet potato in case you’re curious.
- Organic Fire-Roasted Diced Tomatoes + Organic Tomato Paste: The diced tomatoes, along with the tomato paste, adds texture and extra juiciness. I highly recommend using fire-roasted tomatoes for the added smoky flavor, but you can use any diced tomatoes that you have on hand.
- Organic Low-Sodium Vegetable Broth: Any broth truly works and even water, if you’re in a pinch!
- Organic Spices: Chili powder, ground cumin, smoked paprika, dried oregano, chipotle powder, sea salt, and black pepper, are the spices used to season this vegan chili.
- Organic Avocado: For topping of course! Dice it, slice it, or mash it. I personally like to dice and chill the avocado in the fridge, because the chilled avocado will cool the hot chili down. My mouth is watering…
- Organic Cilantro: Another essential topping ingredient. Fresh cilantro adds brightness & that authentic Mexican chili flavor that you can’t beat!
How To Make
- Sauté Onion & Garlic. In a large pot, heat the avocado oil on medium-high heat. Add the chopped onion and minced garlic. Cook for 3 minutes.
- Stir in the Spices. Add in the spices and cook for 1 minute, or until fragrant. If the pot is drying out, add a splash of filtered water, as needed.
- Cook. Add the sweet potato, beans, canned tomatoes, tomato paste, and low-sodium vegetable broth. Bring to a light boil, string everything together. Reduce the heat to medium-low and let cook for 25 minutes uncovered, stirring every so often.
- Blend. For extra-thick chili, pulse with an immersion blender in the pot a couple times. You can also remove a few scoops of chili, and add it to a high-speed blender. Blend until smooth then pour back into the pot and mix together.
- Serve. Ladle into bowls. Serve as is or top with chilled avocado and fresh cilantro, if desired. Enjoy!

Storing & Reheating Vegan Chili
As mentioned above, this Sweet Potato Black Bean Chili recipe is perfect for leftovers & meal prep! Just be sure to let the chili cool completely before transferring to an air-tight glass container.
Fridge Storage. Transfer chili to an air-tight glass container in the refrigerator for up to 5 days.
Reheating. To reheat, simply transfer the chili to a large pot on the stovetop over medium heat, adding a little extra water or broth as needed until warm.
