- Organic Avocado Oil: Avocado oil is my go-to baking oil because it’s neutral in flavor & it can be used at high-heat temperatures.

How to Make
- Crispy Chickpeas. Preheat the oven to 425 degrees F. Add the drained chickpeas to a baking tray lined with parchment paper. Toss with the avocado oil & seasonings. Bake for 20 – 25 minutes, tossing halfway.
- Spicy Honey Mustard. In a mixing bowl, add the dressing ingredients & whisk to combine. Add the water a little at a time until a semi-thick, pourable dressing is achieved. Set aside.
- Assemble. Divide the cooked cauliflower rice, crispy chickpeas, & avocado between bowls. Pair with the spicy honey mustard & garnish with fresh herbs. Enjoy!

- 2 tbsp extra-virgin olive oil
- 1 tbsp Manuka honey
- 1 tbsp Dijon mustard
- 1 tbsp fresh lemon juice
- ½ tsp chipotle chili powder
- ¼ tsp cayenne pepper
- Sea salt & black pepper, to taste
- Spring water, to thin
