Ingredients
- Organic Quinoa: To provide these bowls with nutty flavor, along with protein and fiber. You can use any color that you have on hand – white, red, or multi-color quinoa all work for this recipe.
- Organic Sweet Potato: For this recipe I used organic garnet sweet potato, but any sweet potato works. I personally leave the skin on, because it adds extra fiber! Just be sure to scrub them well before chopping.
- Organic Brussel Sprouts: These sprouts are the perfect addition. They’re full of vitamins, fiber, and minerals too.
- Organic Red Onion: Adding organic red onion adds a pop of color & a burst of flavor.
- Organic Greens: Any kind of greens that you have on hand will work, but I used kale.
- Organic Maple Dijon Dressing: A combination of extra-virgin olive oil, fresh lemon juice, pure maple syrup, dijon mustard, minced garlic, sea salt, & black pepper, are whisked together to drizzle over our bowl.
- Organic Avocado: For some healthy fat creaminess!
How To Make
- Quinoa. Prepare quinoa as package instructions.
- Vegetables. Preheat the oven to 425 degrees F. On a baking sheet, add the chopped vegetables. Toss in the oil and seasonings. Transfer to the oven and roast for 20 – 25, flip halfway through.
- Kale. Add the washed and chopped kale to a large mixing bowl along with a healthy pinch of sea salt. Using your clean hands, massage for 1 – 2 minutes to soften the kale.
- Maple Dijon Dressing. In a mixing bowl, combine the dressing ingredients and whisk to combine.
- Serve. Divide greens, quinoa & roasted vegetables, between bowls. Top with the dressing. Enjoy!
