In all honesty, I have never incorporated lentils into my salads before, but that has changed after this recipe. As the lentils provide this vegan salad recipe with some plant protein and fiber, which in turn makes this salad super satisfying.
Although lentils are one of the main ingredients in this recipe, there is also the roasted vegetables, as well as the avocado green goddess dressing. It’s a unique, but delicious combination that I know you will have on repeat.
This healthy vegan salad recipe is not only delicious, but it’s also easy to make! We begin by roasting veggies, which gives us about 25 minutes to do the other tasks. While those are cooking, we cook the lentils, we puree the dressing, and grab the mixed greens. When the vegetables are done roasting and the lentils are done cooking, we serve. Starting with the greens, top with the lentils, roasted vegetables, a drizzle of tahini, a sprinkle of hemp hearts, and pair with the avocado green goddess dressing.
Simply put, this loaded vegan salad recipe is perfect when you’re craving something healthy and nourishing without the fuss.

Ingredients
- Organic Lentils: Lentils are full of fiber and packed with protein. I used organic green lentils, but brown would work in this loaded vegan salad recipe!
- Organic Sweet Potato: For this recipe I used organic stoke sweet potato, for the pop of color and boost of nutrition. However, any sweet potato works in this recipe. I personally leave the skin on, because it adds extra fiber! Just be sure to scrub them well before slicing.
- Organic Zucchini: Adds the perfect amount of brightness, as well as extra nutrients to this vegan salad.
- Organic Carrots: Chopped and baked. You can even substitute for baby carrots if needed.
- Organic Greens: Any greens work great for this vegan bowl. I used a combination of spinach, kale, & chard.
- Organic Avocado Green Goddess Dressing: Because no salad is complete with a dressing. A combination of ripe avocado, fresh basil, green onions, garlic, and tangy lemon juice all gets pureed together to pair with our dish.
- Organic Tahini and Organic Hemp Hearts: Some additional toppings for some extra healthy fats and nutrients.
- Organic Avocado Oil: This is my favorite oil to use while baking, because it can withstand high cooking temperatures.
How To Make
- Roasted Vegetables. Preheat your oven to 400 degrees F. Add the sweet potatoes, sliced zucchini, and matchsticks carrots, to a baking tray lined with parchment paper. Drizzle with avocado oil and season with sea salt & pepper. Roast for 20 – 25 minutes, flipping halfway.
- Lentils. As the veggies are roasting, prepare the lentils. Add the rinsed lentils to a pot, along with the liquid. Bring to a boil and cook for 15 – 20 minutes, until lentils are tender, but not mushy.
- Avocado Green Goddess Dressing. In a food processor or high-speed blender, combine all ingredients. Blend until smooth & creamy.
- Serve. Divide greens between bowls at the bottom, top with the lentils, roasted vegetables. Drizzle with tahini, a sprinkle of hemp hearts, and pair with the goddess dressing. Enjoy!
Tips for Making this Lentil Salad Perfectly
- Organic Lentils: Both organic green or brown lentils work for this salad recipe. I don’t recommend red lentils though. Just be sure to rinse the lentils well before adding them to the pot.
- Organic Sweet Potato: You can use your favorite type of sweet potato. I personally leave the skin on, because it adds extra fiber! Just be sure to scrub them well before slicing.
- Cut the Sweet Potato Fries Thinly: Cut the sweet potatoes into fry-shaped. The thinner they are, the crispy they’ll get.
- Organic Vegetables: Feel free to add in even more veggies! I think adding cauliflower florets &/or beets to the sheet pan would pair deliciously!
- Organic Greens: Use what you have on hand for the base of our salad. Spinach, kale, arugula, or a combination will all work!
Storing & Reheating
As mentioned above, this loaded vegan salad recipe is perfect for leftovers & meal prep! Just be sure to let the ingredients cool completely before transferring to an air-tight glass container.
Fridge Storage. Transfer salad ingredients to separate air-tight glass containers and refrigerator for up to 4 days. Assemble them when ready to enjoy.
Reheating. To reheat, preheat the oven to 350 degrees F. Transfer the roasted veggies to an oven-safe bowl. Place in the oven for about 15 minutes, until warmed through. Alternatively, place in a microwave-safe bowl to reheat in the microwave. To serve, pair with the greens, fresh vegetables, and the goddess dressing.

ROASTED VEGETABLES

- 2 tsp organic avocado oil
AVOCADO GREEN GODDESS DRESSING
- 1 avocado
- 1 cup fresh basil
- 2 green onions
- 2 garlic cloves
- 2 tbsp fresh lemon juice
- Sea salt & black pepper
- ¼ cup filtered water
SALAD

Instructions
