I’m back with another kale salad—& if you’ve tried my others, you know I don’t do boring. While most salads are basic, mine are always hearty, flavorful & genuinely satisfying. And this Roasted Chickpea & Sweet Potato Kale Salad with Honey Mustard Dressing? It might just be a new favorite.
It starts with massaged kale for a tender, nutrient-rich base, then gets loaded with roasted sweet potatoes, crispy chickpea “croutons,” creamy avocado & crunchy pumpkin seeds. But the real star is the rich & dairy-free honey mustard dressing that ties it all together with creamy, tangy perfection.
Unlike most honey mustard dressings, this one is actually good for you—made with raw tahini, honey or pure maple syrup (for a vegan option), Dijon mustard, lemon juice, apple cider vinegar & extra-virgin olive oil. It’s creamy, sweet, tangy & perfectly balanced—ideal for drizzling over every bite.
This vibrant kale salad is packed with fiber, plant-based protein & healthy fats. It’s filling but still fresh, making it perfect for lunch, dinner, or weekly meal prep. Best of all, it comes together in just about 35 minutes!

Ingredients
- Organic Chickpeas: We swap traditional croutons for roasted chickpeas, adding the perfect crispy texture & a boost of protein to this sweet potato salad.
- Organic Sweet Potatoes: I like to leave the skin on for extra fiber—just be sure to give them a good scrub before chopping.
- Organic Kale: The hearty, nutrient-packed green base that brings color & texture to the salad.
- Organic Honey Mustard Dressing: A creamy, sweet, & tangy mix of tahini, extra-virgin olive oil, Dijon mustard, honey (or pure maple syrup for a vegan option), lemon juice, apple cider vinegar, sea salt, & black pepper.
- Organic Avocado: Fresh, ripe slices add creaminess & healthy fats to balance the salad.
- Organic Pumpkin Seeds: Also called pepitas, these little seeds add a satisfying crunch & a nutrient boost to finish off the salad.

How to Make
- Roasted Chickpeas & Sweet Potatoes. Preheat the oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper. Toss the drained chickpeas & chopped sweet potatoes with oil & seasonings. Spread in a single layer & bake for 20–25 minutes, flipping halfway through.
- Kale. Place the chopped kale in a large salad bowl & squeeze fresh lemon juice over it. Using clean hands, massage the kale for 2–3 minutes until tender.
- Honey Mustard Dressing. In a mixing bowl, combine the honey mustard ingredients. Add the spring water a tablespoon at a time until a semi-thick, pourable consistency is achieved. Set aside.
- Assemble. Divide the massaged kale between serving bowls. Top with roasted sweet potatoes, chickpea croutons, sliced avocado, dressing, & pumpkin seeds. Enjoy!

- Drain Chickpeas: Make sure to drain your chickpeas well before roasting to help them get extra crispy.
- Flip While Baking: Remember to flip the chickpeas & sweet potatoes halfway through baking so everything cooks evenly & turns perfectly golden.
- Always Massage the Kale: Trust me on this—kale can be tough & chewy if not massaged. Spend at least 2 minutes massaging the leaves for a tender, delicious base (bonus: it’s a great hand workout!).
- Honey: Manuka honey, local raw unfiltered honey, or organic pure maple syrup to make it vegan will all work.
Storing & Reheating

Storing. Transfer the salad ingredients to separate airtight glass containers & refrigerate for up to 4 days.
Reheating. To reheat, preheat the oven to 350°F (175°C). Transfer the chickpeas & sweet potatoes to an oven-safe bowl. Place in the oven for 10–15 minutes, until warmed through. To serve, pair with the kale, avocado, honey mustard dressing, & seeds.

- 1 tbsp Manuka honey or local raw unfiltered honey or pure maple syrup
- 1 tbsp Dijon mustard

- Spring water, to thin

- Avocado(s), sliced
